What is vegetarian jerky? It is a meatless type jerky made from wheat gluten, soy flour, and extract of soybeans. This bean paste jerky can be made to taste many different ways, depending on the herbs and spices it is made with. You can buy several different varieties of meatless jerky online or in health food stores.

Soy Bean Patties or Veggie Burgers

Besides vegetarian jerky, veggie burgers are another tasty and healthy soybean based food. There are several ways you can prepare soybean patties. This particular recipe that I am sharing with you is quite easy and very healthy.

Veggies Burgers Ingredients

2 cups soybeans,
1-cup millet or brown rice
½ cup quick cooking oats
½ cup whole-wheat flour
½ onion, diced
1-teaspoon garlic powder
2 tablespoons liquid aminos, or soy sauce
1-teaspoon basil
1-teaspoon oregano
1-teaspoon sea salt
½ teaspoon freshly ground pepper

Preparation

Cook soybeans until done. Cook brown rice or millet according to package directions and set aside. With a fork or potato masher, mash the beans. They don't need to be pureed. You can quickly sauté the veggies, or you can leave them raw, it's really up to you, just make sure they are diced fine if left raw.

Mix all of the ingredients together and form into patties. Bake in the oven for 45 minutes at 350 or fry in a pan with safflower oil. Serve with whole-wheat rolls or bread and condiments of your choice.

Textured Soy Protein

Textured soy protein is similar to vegetarian jerky but is more widely used in packaged and refined foods and sold in retail grocery and health food stores. Vegetarians and health conscience individuals use textured soy protein as a partial substitute for ground meat in recipes.

Soy protein can replace half or all of the meat in meat loaf, hamburgers, meatballs, and many other meat dishes that call for ground beef. The wonderful aspect about soy protein is you will still get lots of protein, which is a great substitute for vegetarians.

Cooking With Tofu

Tofu or bean curd is used extensively in Japanese cuisine. Tofu can be steeped in an aromatic broth, and then broiled stir-fried, or simmered with other ingredients. Because of its delicate texture, tofu takes on the flavor of any sauce or broth it is cooked in.

Tofu is healthy. It has lots of protein, iron, calcium, and B vitamins, and it contains no cholesterol. Here is a quick, easy, and healthy tofu recipe.

Tofu Stir-Fry Ingredients

1 block of tofu
½ cup carrots, sliced thin
2 garlic cloves, diced
3 scallions, diced
1 bell pepper, sliced thin
1-cup mushrooms
¼ cup sesame seeds
¼ cup soy sauce
Olive oil for sautéing

Preparation

Slice the tofu in small bite sized blocks. Heat olive oil in a wok or other pan, and add garlic and stir-fry for 30 seconds. Add the tofu in batches, carefully stirring until lightly browned. Remove tofu from pan and set aside. Add vegetables, sesame seeds, and soy sauce and cook for two minutes. Add the tofu and stir for two more minutes. Serve with Chinese noodles.

It's nice when I find a meal where the foods compliment each other because it simplifies my life by knowing what to serve with what. Of course I don't have to stick to any one meal plan; I can mix and match the main dishes and sides, but a lot of the time I'm in a hurry and don't have a lot of time to think about it. I already have quite a few meals like this up my sleeve, but when I find a NEW one to add to my collection I get happy because it adds a little more variety to our meal choices.

I'd like to share some of my new and old meal plans with you in hopes of helping you with the question `what do I make for dinner'. Here's a meal that we have tried lately where the foods complimented each other really well. The food items aren't necessarily new for us, but the flavors are and that makes a big difference.

The Meal:


Honey Barbecue Meatloaf

Ranch Mashed Potatoes

Your choice of vegetable (I just heat up a can of green beans or corn)

Apple Cinnamon Muffins with Honey Cinnamon Butter

Make Ahead Tips: You can make the Honey Cinnamon Butter ahead of time and refrigerate until serving. You can also prepare the meat loaf and refrigerate it before baking.

The Recipes:

Honey Barbecue Meat Loaf

I'm not usually a meat loaf eater but I love this one and the family does too.

1 envelope dry onion soup mix

1 egg

1/2 cup oats -- quick cooking

1/3 cup barbecue sauce -- honey flavored

1/4 cup chopped onion

2 tablespoons brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon mustard -- prepared

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon chili powder

1 pound ground beef

ketchup

In a large bowl, stir together soup mix, egg, oats, barbecue sauce, onion, brown sugar, Worcestershire sauce, mustard, garlic powder, salt, pepper and chili powder. Add beef and mix well. Press into an ungreased 8-in. x 4-in. x 2-in. loaf pan. Bake at 350* for 1 hour. Top with ketchup. Bake 5-10 minutes longer or until meat is no longer pink and a meat thermometer reads 160*. Let stand 10 minutes before serving.

Ranch Mashed Potatoes

Make mashed potatoes as you usually do but omit the butter and add ranch dressing and cream cheese to taste along with less milk than usual. Top with grated cheddar cheese.

Apple Cinnamon Muffins

My kids love these (so do I) and there's never any leftovers because of this. We also make them for breakfast. Be sure to try them with `Honey Cinnamon Butter' (recipe follows).

1 1/2 cups all-purpose flour

1/2 cup sugar

1 3/4 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1 egg

1/2 cup milk

3 tablespoons vegetable oil

3 tablespoons applesauce

1 medium tart apple -- peeled & grated

topping:

1/4 cup packed brown sugar

1 tablespoon all-purpose flour

2 tablespoons butter or margarine -- cold

1/2-cup oatmeal -- old fashioned

In a bowl, combine the first six ingredients. Add the egg, milk, oil and applesauce and stir until just moistened. Fold in apple. Fill greased or paper-lined muffin cups two-thirds full. For topping, combine brown sugar and flour. Cut in butter until crumbly. Stir in oats. Sprinkle over muffins. Bake at 400* for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm with Honey Cinnamon Butter (recipe follows). Yield: 1 dozen.

Honey Cinnamon Butter

1 cup butter or margarine, softened

1/2 cup honey

1 teaspoon ground cinnamon

Combine all ingredients in a small mixing bowl; beat until smooth. Serve with muffins, toast, bagels, French toast or pancakes. Refrigerate any leftovers. Yield: 1 1/3 cups.

Leftovers. Convenient or a pain in the backside? Well, it depends on who you ask. For the person who doesn't have time to cook and looks forward to just opening up the fridge and pulling out yesterday's meat loaf, it's a Godsend. But for the person who's fridge is stuffed to the gills and he doesn't have a place to put the stuff, it could be a total nightmare, especially if you're the type of person who doesn't like to throw out food because of all the starving people in the world. And then of course there is the boredom of eating the same thing night after night after night. Well, your leftover problems are a thing of the past. Below, you will find a few tips to make leftovers a minor problem at worst.

For those who don't have the room in the fridge to put the leftovers, especially after a big party, there is one very simple solution. Give the food away. If your guests enjoyed your meat loaf then there is no reason why they can't take some of it home with them. In the case of things like leftover sheet cake, which is always a problem after a party, you simply cut it up into smaller blocks and give it to people to take home. If they don't want it, no problem. Having cut the cake up into smaller blocks, this will make it easier to store the cake in the fridge, which will be necessary when you're dealing with whipped cream frosting.

If people aren't thrilled about taking your food home with them, you can always try the cake trick with the food itself. Just because you had one dish of meat loaf and another dish of baked ziti, doesn't mean that you can't put what's left of them both on a plate together. Don't worry, they won't fight. This will save quite a bit of room in the fridge especially if you have a number of things you can consolidate.

For those of us where room in the fridge is not the problem but we just don't want to eat the same thing night after night, there is a solution to that problem as well.

Riddle. When is ham not ham? When it's ham. If that sounds confusing, let me explain.

Let's say you're throwing a graduation party for your daughter and you decide to have a bunch of deli platters. You order enough food for 50 people but only 35 show up. At the end of the night you find out that you have enough deli left over to start your own delicatessen. What do you do?

Well, if you've got enough room in the fridge, bring it home in plastic bags. Stuff like turkey, ham and roast beef will have to be used quickly. Things like hard salami will stay longer so there's not an immediate rush to eat it.

Now to answer the riddle of when a ham is not a ham. Deli ham is great with mustard on rye bread. But did you know that you can also take it, put a little cinnamon on it and surround it with pineapple and throw it in the oven? Guess what? When you take it out, it tastes nothing like the ham you had on rye with mustard. You just made yourself a new meal. Add some veggies and you're set.

What about the roast beef that's also great on a sandwich? Don't want to eat roast beef sandwiches for a week? No problem. Go to the market, get some gravy master and throw that roast beef in the oven. Won't taste anything like the roast beef you had the day before.

There are many ways to get creative with leftovers. You just have to have a little imagination.

There is nothing better than hamburger stew on the open flames of the campfire and there are some wonderful recipes that even the least experienced cook can handle on the outdoor fire ring. Here is a recipe that any cook would love to have in their recipe files to make camping. You should first start with the perfect fire and it will make the difference in how hot the charcoals are, they will be ashy and gray. Depending on how hot the coals are will determine how fast the stew will cook. You can prepare the ingredients at home before your trip to eliminate some of the work when you get to your campsite. Chop your vegetables prior to your trip. Chop your celery, carrots, onions, and potatoes mix with salt and pepper then place in a zip lock baggy. Be sure to place them on ice or in a cooler so they do not turn brown.

Ingredients

. 1 -1/12 pound(s) ground beef
· 1 -2 c chopped carrots
. 2 celery stalks (diced)
· 1 medium onion, chopped
· 4 -5 medium potatoes, chopped
· 1 bag frozen peas
· 1 package onion soup mix
· water
· salt and pepper
· oregano or basil
· 1 loaf french or sourdough bread

Brown the meat in a large cast iron pot or dutch oven. Add the carrots, celery onions, potatoes and onion soup mix with enough water to cover. Cover the pot and simmer until the potatoes are tender (about 20-30 minutes). Slice and butter the bread. Wrap it in foil and place near the fire so that the bread will toast from the heat of the fire. Add the peas to the pot. Season to taste with salt, pepper and oregano or basil. Simmer until the peas are hot. Serve with the warm bread. Yummy, there is nothing better then campfire cooking

Another recipe that you cook on the campfire is Brunswick stew. You can also eliminate the chopping, dicing, and cutting for home prior to your camping trip.

Ingredients

· 3 pound(s) stewing chicken (cut up)
· 2 pound(s) beef stew meat
· 2 bay leaves
· 1 tsp thyme, parsley
· 3 stalks celery
· 2 onions
· 1 Tbsp black peppercorns
· 2 Tbsp salt/pepper Blend
· 2 cans tomatoes (cut up)
· 2 cup carrots (peeled and chopped)
· 2 cup celery (chopped)
· 2 cup onions (chopped)
· 3 large potatoes (diced)
· 2 cup lima beans (frozen)
· 3 cup corn (fresh off the cob)

Directions

Add chicken and beef stew meat to dutch oven then place on the hot coals. Add bay leaves, thyme, parsley, celery stalks, onion wedges, salt and pepper blend and peppercorns. Simmer covered until chicken and beef are thoroughly tender, about 2 hours. Remove meat and set aside to cool. Strain the stock and discard veggies and herbs. Skim off some of the fat. Add tomatoes, carrots, chopped celery, onions, potatoes, lima beans and corn to strained stock. Simmer uncovered until all vegetables are tender, about 30 to 45 minutes. Bone chicken and remove pieces of ham hock from the bone. Return meat to pot.

10 Sneaky Ways to Add More Fiber to Your Diet

Despite its numerous health benefits, many people equate fiber with endless salads or food that tastes like cardboard. This does not need to be the case. By following some of the ideas listed below, you can increase the fiber in your diet effortlessly
Switch to whole grain pasta. The average pasta is made from refined white flour and contains little to no fiber. In contrast, whole grain pasta contains 5 or more grams of fiber in a serving. Whole grain fiber does have a slightly nutty taste and a different texture. If this is not to your liking, be sure to look for the white whole grain varieties. An alternative would be to start by using a mixture of half regular pasta and half whole wheat pasta. You can increase the amount of whole wheat pasta as you become accustomed to the taste.

Use white varieties of whole grain bread. Even finicky children can't tell the difference as it tastes very similar to white bread. Be sure to look for varieties that contain 2-3 grams of fiber per slice.

Substitute whole grain pastry flour for white flour in your baking. Regular whole grain flour can add a bit of grittiness to baked goods. Whole grain pastry flour is more finely ground and results in baked goods with a texture similar to those made with white flour. By substituting a cup of whole grain pastry flour for white flour, the fiber content of the recipe is boosted by 14 grams.

Use finely-ground Fiber One cereal in the place of bread crumbs for faux fried foods. You can use it to make oven-fried chicken, onion rings, and even cheese sticks. Just one cup of Fiber One cereal adds 14 grams of fiber. Not only are you boosting the fiber content, but faux-fried foods contain just a fraction of the fat and calories of the original.

Mix some oats into your favorite meat loaf recipe. It adds fiber without altering the taste. A cup of oats adds an additional four grams of fiber.

Bulk up your favorite convenience foods with extra veggies. From time to time, we all have to rely on convenience and processed foods. The problem is processed foods are notoriously high in fat and low in fiber. You can feel better about serving them if you boost the vegetable content. Chop up a couple cups of your favorite vegetables and add them to your favorite convenience meals. The vegetables cook while the entree is cooking. It's quick and easy.

Add beans to your entrees. For example, a cup of white beans adds a whopping 11 grams of fiber. If you dislike the texture of beans, mash them up and add them to soups, casseroles, or sauces. You can't tell they are in there.

Replace part of the fat in baked goods with fruit and vegetable purees. Pear, apple, and even pumpkin puree can replace part of the fat in your favorite recipes. In addition you are getting the added benefit of additional fiber. Feel free to experiment. Would you believe you can add beet puree to brownies without altering the taste? It's true!

Eat the peel. The peel of fruits and vegetables is where the majority of the fiber lies, yet many of us discard it, missing out on the 2 grams of fiber it provides. Instead of using instant potatoes, make regular mashed potatoes. No need to peel them, just wash and quarter. Boil then mash with the skins still on for a fiber boost.

Eat the fruit rather than drinking the juice. The peel and pulp are where the majority of the fiber is located. Whole fruit is more filling than juice, so don't cheat yourself.

The best sources of fiber are whole grains, vegetables, and fruits. By adding a variety of these foods to your diet, you can successfully increase your fiber intake. Adults need around 25 to 35 grams of fiber daily. If your diet was previously low in fiber, it would be wise to increase the amount gradually over the course of a couple of weeks to allow your body time to adjust. Also, be sure to drink plenty of water.

Adding more fiber to your diet can be easy if you think outside the box. With a little creativity and sneakiness, your health can reap the benefits of a high fiber diet.

I remember as a child want my people to Chinese food. My favorite part of the meal was something sweet dipping in acid.

Today, it is common for restaurants to serve crispy won ton noodles to tap the sweet and sour sauce.

The sauce I make is not good for you in a Chinese restaurant. My name is plump tangerine sauce and salsa. It takes time to prepare, but I never rests.

1 cup whole tomatoes (about 1 box)

½ cup cider vinegar

½ cup white onion

½ cup sugar 1

1 slice fresh ginger, 1 / 8 inch thick

1 tablespoon soy sauce

½ cup sliced peppers (I usegreen)

Salt

½ cup crushed pineapple.

Preparation:

First of all ingredients except green peppers.

Bring to second boil.

Third Simmer for 20 minutes over low heat. No coverage.

Add one quarter of corn starch to thicken if necessary.

5 Add the peppers and serve.

Chili Cheese Dogs

A complete package of hot dogs

2 cans of chili

1 can condensed cheddar cheese soup
