Leftovers. suitable or a pain in the backside? Well, it depends on who you ask. For the man who doesn't have time to cook and looks transmit to just opportunity up the fridge and pulling out yesterday's meat loaf, it's a Godsend. But for the man who's fridge is stuffed to the gills and he doesn't have a place to put the stuff, it could be a total nightmare, especially if you're the type of man who doesn't like to throw out food because of all the starving habitancy in the world. And then of course there is the boredom of eating the same thing night after night after night. Well, your leftover problems are a thing of the past. Below, you will find a few tips to make leftovers a minor question at worst.

For those who don't have the room in the fridge to put the leftovers, especially after a big party, there is one very straightforward solution. Give the food away. If your guests enjoyed your meat loaf then there is no reason why they can't take some of it home with them. In the case of things like leftover sheet cake, which is always a question after a party, you plainly cut it up into smaller blocks and give it to habitancy to take home. If they don't want it, no problem. Having cut the cake up into smaller blocks, this will make it easier to store the cake in the fridge, which will be requisite when you're dealing with whipped cream frosting.

Meat Loaf

If habitancy aren't thrilled about taking your food home with them, you can always try the cake trick with the food itself. Just because you had one dish of meat loaf and an additional one dish of baked ziti, doesn't mean that you can't put what's left of them both on a plate together. Don't worry, they won't fight. This will save quite a bit of room in the fridge especially if you have a amount of things you can consolidate.

For those of us where room in the fridge is not the question but we just don't want to eat the same thing night after night, there is a solution to that question as well.

Riddle. When is ham not ham? When it's ham. If that sounds confusing, let me explain.

Let's say you're throwing a graduation party for your daughter and you decree to have a bunch of deli platters. You order sufficient food for 50 habitancy but only 35 show up. At the end of the night you find out that you have sufficient deli left over to start your own delicatessen. What do you do?

Well, if you've got sufficient room in the fridge, bring it home in plastic bags. Stuff like turkey, ham and roast beef will have to be used quickly. Things like hard salami will stay longer so there's not an immediate rush to eat it.

Now to reply the riddle of when a ham is not a ham. Deli ham is great with mustard on rye bread. But did you know that you can also take it, put a microscopic cinnamon on it and surround it with pineapple and throw it in the oven? Guess what? When you take it out, it tastes nothing like the ham you had on rye with mustard. You just made yourself a new meal. Add some veggies and you're set.

What about the roast beef that's also great on a sandwich? Don't want to eat roast beef sandwiches for a week? No problem. Go to the market, get some gravy devotee and throw that roast beef in the oven. Won't taste anyone like the roast beef you had the day before.

There are many ways to get creative with leftovers. You just have to have a microscopic imagination.

These are tough economic times but when times get tough, I say the tough get creative. Bill and Rosemary Haley writing in their book Haley's Hints have some great ideas about what to do with leftovers. With our grocery bills getting higher and higher, you'll find these tips very useful.

POULTRY, MEAT AND FISH

Meat Loaf

Ham - Use ham slices to decorate and liven up muffins. Split the centers and stuff with rolled ham. Dice cooked ham for use in salads and omelets.
Pork - Slice leftover pork and add to rice dishes or soups.
Meatloaf - Add leftover meatloaf to your spaghetti sauce. Make a meatloaf salad (like egg salad) for sandwiches by mixing with onions and mayonnaise. Here is my favorite use for leftover meatloaf or hamburgers - roll it up in tortillas with scrambled eggs for breakfast tacos.
Bacon - Fry up that last piece or two of bacon and crumble it for use in salads or as a topping. Again, you can use it will eggs in a breakfast taco or save it for a BLT sandwich especially good in the summer when home grown tomatoes are available.
Tuna Salad - Leftover tuna salad can be added to cooked macaroni. Sprinkle with cheese and bake for 1/2 hour. Instant casserole.

PASTA

Leftover noodles - Add leftover noodles to chicken or beef broth for a a delicious next day soup. Toss pasta with oil, vegetables and seasonings for a cold noodle salad. You can also make spaghetti pie by adding tomato sauce, cheese and a few veggies and then baking the mixture in the oven in a pie plate.

RICE

-Mix with kidney beans (rice and beans make a perfect protein), your favorite seasonings and toss. Makes an interesting side dish.
-Add olives and pimentos for a cold rice salad.
-Make rice pudding.
-Add vegetables, cut up chicken, leftover pork or beef or even leftover chicken nuggets and scrambled egg to make fried rice. My kids always loved that recipe. You can find recipes for fried rice online.

VEGETABLES

-Keep corn, peas, carrots, green beans for use in a rice salad.
-Add to your home-made or canned tomato soup.
-Reheat baked potatoes. Slice at 1/2 inch intervals and stuff with garlic butter or make twice baked potatoes or those great baked potato skins.
-Grated potatoes make great meatloaf extender.
-Pan-fry leftover boiled potatoes or boil some eggs and make a potato salad.
-Roll mashed potatoes into balls, dip them in egg, then bread crumbs and bake until golden brown.

Leftovers and Hand-Me-Downs

If it was meatloaf night last night, do you look forward to leftovers tonight? Most likely, that depends on whether or not you like meat loaf in the first place. The value we place on the meat loaf, or any leftovers, determines our enthusiasm for the item when faced with it again. That simple principle can help turn anything into a positive, no matter what the event.

Taking the case of hand-me-downs, let's look at this principle a bit more. Most people would not argue with the fact that a hand-me-down blouse or shirt is not nearly as exciting as a handed down item of jewelry, particularly if the jewelry is diamonds or fine jewels. It's easy to see how the "value" of the jewelry is worth more. That is, of course, the perceived value of jewelry. However, to someone without clothing, a ring or necklace would do them little good when they need clothing. And while they could sell it, their immediate needs are for the more practical, making the shirt or blouse more valuable for them because it is immediately something they can utilize without having to go to great measures to turn it into something else.

Let's take an event instead. Imagine a rainy day - sheets of rain pouring down all day long, filling the drains with rushing water, the sidewalks with puddles, and the sky with a grey haze. Does this fill you with joy or put you in a melancholy state of mind? Some people love rainy days and others don't. Some people love the sound of the rain and the smell in the air. Others prefer the sunshine and shadows that play on the ground as the sun shifts and changes them around throughout the day. They love the heat waves that radiate off of the concrete on a hot, sunny day. The value you place on rain or sun determines the reaction and attitude you have toward that event, namely the rain. It also affects your mood for the rest of the day.

From this very simplistic principle, a greater truth emerges. The value we place on events, people, and things in our lives determines our happiness and joy throughout the day. Everyone, no matter who they are, will have good days and bad days. There will be joys and challenges, but the value we place on them has much to do with our attitudes as we encounter them. If our attitude can be one of looking for the value, the benefit, or the good to come from it, then we can face all of the joys and challenges with the same optimistic and positive outlook.

Me? I don't like meatloaf and I don't like rainy days most of the time; I like a good diamond, but I have some classic favorites in my wardrobe that I will wear without the diamonds, because they serve me better. But, I can be grateful for food to eat, clothes to wear, and an occasional rain shower that fills the world around me with green grass and flowering bushes for those sunny days that I look forward to.

When you are looking for ways to stretch your budget and take your money can go further, look at that.
