Vegetarian Italian - Delicious Options For Meat Lovers

Everyone agrees that eating less meat is healthier -- for you, for your pocketbook, for the planet. But I've tried to adopt vegetarianism and found it doesn't work for me. I never really feel good on a 100% vegetarian diet.

I believe that each body is different, and that some people simply need meat protein. So how do you balance that need with your desire for a healthier lifestyle?

Meat Loaf

One excellent answer is centuries old -- vegetarian Italian cuisine! Since Roman times, Italian food has mainly focused on eggs, cheese, bread, olives and fresh seasonal vegetables. The Romans reserved meat and fish for special occasions.

As time went on, however, meat-eating became a privilege of the wealthy. Country folk continued to grow their own food, and usually raised cattle as a source of milk and cheese, not meat.

In the 1980s, Italy gave birth to the international Slow Food movement, which strives to preserve traditional and regional cuisine, and promotes farming methods in line with the local ecosystem.

These things, and more, have contributed to a culinary tradition rich in meatless options.

So why not go beyond pizza and pasta, and try one unusual vegetarian Italian dish this week? Here are a few suggestions to get you started:

Polenta

A strange but yummy cornmeal porridge that's easy to make. A cousin to American grits, polenta is a staple in northern Italy and makes a satisfying winter meal. You can find it in most grocery stores, with directions on the package.

A soft mound of polenta can be the base for cooked greens, sauteed portabello mushrooms or any vegetable. It can also be baked in a loaf pan, then thinly sliced. Sliced polenta can replace bread or lasagna as a base for almost any filling, including pesto, mozzarella, tomato sauce and roasted peppers.

Risotto

A delicious creamy rice dish that can be enhanced with almost any vegetable. It must be made from Arborio rice, which can be found in most grocery stores. Risotto has a reputation for being tricky, but the new oven-baked and crockpot methods are almost effortless. Favorite vegetarian additions include asparagus, mushrooms and artichoke hearts (frozen work fine). Butter and freshly-grated parmesan cheese add flavor and texture.

Toward a More Creative Cuisine

My purpose is not to convert you to vegetarianism, but to inspire you to eat more creatively. I do recommend eating bread, butter and cheese in moderation, and as close to homemade as you can find. Avoid low-fat versions. Try fresh mozzarella, the type that comes in water. Frequent artisan bakeries and farmers' markets. Eat vegetables in season, not those flown in from the opposite hemisphere.

When you concentrate on fresh, whole, local ingredients, you'll discover that your cravings for fat and sugar decline. Centuries of eating this way can't be wrong!

Vegetarian Jerky and Other Soy Foods

What is vegetarian jerky? It is a meatless type jerky made from wheat gluten, soy flour, and extract of soybeans. This bean paste jerky can be made to taste many different ways, depending on the herbs and spices it is made with. You can buy several different varieties of meatless jerky online or in health food stores.

Soy Bean Patties or Veggie Burgers

Besides vegetarian jerky, veggie burgers are another tasty and healthy soybean based food. There are several ways you can prepare soybean patties. This particular recipe that I am sharing with you is quite easy and very healthy.

Veggies Burgers Ingredients

2 cups soybeans,
1-cup millet or brown rice
½ cup quick cooking oats
½ cup whole-wheat flour
½ onion, diced
1-teaspoon garlic powder
2 tablespoons liquid aminos, or soy sauce
1-teaspoon basil
1-teaspoon oregano
1-teaspoon sea salt
½ teaspoon freshly ground pepper

Preparation

Cook soybeans until done. Cook brown rice or millet according to package directions and set aside. With a fork or potato masher, mash the beans. They don't need to be pureed. You can quickly sauté the veggies, or you can leave them raw, it's really up to you, just make sure they are diced fine if left raw.

Mix all of the ingredients together and form into patties. Bake in the oven for 45 minutes at 350 or fry in a pan with safflower oil. Serve with whole-wheat rolls or bread and condiments of your choice.

Textured Soy Protein

Textured soy protein is similar to vegetarian jerky but is more widely used in packaged and refined foods and sold in retail grocery and health food stores. Vegetarians and health conscience individuals use textured soy protein as a partial substitute for ground meat in recipes.

Soy protein can replace half or all of the meat in meat loaf, hamburgers, meatballs, and many other meat dishes that call for ground beef. The wonderful aspect about soy protein is you will still get lots of protein, which is a great substitute for vegetarians.

Cooking With Tofu

Tofu or bean curd is used extensively in Japanese cuisine. Tofu can be steeped in an aromatic broth, and then broiled stir-fried, or simmered with other ingredients. Because of its delicate texture, tofu takes on the flavor of any sauce or broth it is cooked in.

Tofu is healthy. It has lots of protein, iron, calcium, and B vitamins, and it contains no cholesterol. Here is a quick, easy, and healthy tofu recipe.

Tofu Stir-Fry Ingredients

1 block of tofu
½ cup carrots, sliced thin
2 garlic cloves, diced
3 scallions, diced
1 bell pepper, sliced thin
1-cup mushrooms
¼ cup sesame seeds
¼ cup soy sauce
Olive oil for sautéing

Preparation

Slice the tofu in small bite sized blocks. Heat olive oil in a wok or other pan, and add garlic and stir-fry for 30 seconds. Add the tofu in batches, carefully stirring until lightly browned. Remove tofu from pan and set aside. Add vegetables, sesame seeds, and soy sauce and cook for two minutes. Add the tofu and stir for two more minutes. Serve with Chinese noodles.

This dish is very, very nutritious, in no event tree, easy and convenient! Who is the perfect meal?

You need the following ingredients:

A large cauliflower
Three large potatoes, boiled and peeled
One tablespoon coriander
A fresh green (seeded if you prefer a sweeter taste)
One chopped onion
A half-teaspoon of turmeric
A teaspoon Dhania powder
One tablespoon lemon juice
Two tablespoonsQuark
A teaspoon of cumin
Olive

For the dough

Two tablespoons flaked coconut
A half-cup of chopped coriander
Three green chillies (seeded if you prefer a sweeter taste)
A teaspoon of grated ginger
One clove garlic
One chopped onion
A teaspoon of whey powder

First Divide the cauliflower and cook in boiling water for five minutes.
2 Meanwhile, the oil in a pan and add the cumin until they begin to pop.
3 Add the onion and fresh green and fry until the batter is pink.
4 Then add the paste, turmeric powder, Dhania powder and fry for another two or three minutes.
Add pasta to cool the entire fifth continue until boiling and shipping costs.
Sixth Then add the potatoes and cauliflower until it thickens, stirring occasionally.
Lemon juice garnish with coriander seventh.

And you're ready to go! Serve with bread Nannand glasses of ice cold milk. Enjoy!
This recipe is for two people to strengthen measures accordingly if you need more.
