Baking is a method of cooking food that is done through the use of dry heat. This is commonly done in an oven but can also be done over a fire or hot coals. This cooking is done through the process of convection and conduction. Most commonly we use the method of baking for goods such as breads, pies, pastries, cakes, casseroles etc. There are times however when we can use baking for meats, such as when we cook meat loaf, or when we bake the turkey for out Thanksgiving feast.

Baking works by changing the structure of the starches in the food. It also browns the outside of the food. This process of browning the food is called carmelization and when the food is carmelized the moisture is partly locked in. This not only makes the food more attractive in appearance but also helps it to be moister inside. Of course, if left to cook to long, the food will dry out.

Baking is an activity that has been enjoyed by families for decades. The smell of fresh bread or homemade cookies makes any home cozy and warm. Baking is something that brings families together as children gather round, hoping to have a turn to pour in the sugar or the flour. It is fascinating to take a list of ingredients like flour, eggs and sugar, and by mixing them and baking them you can change their structure to create a fresh loaf of bread.
