Easy Recipes for great family Meals

Saturday, June 25, 2011

The daily dilemma: what to cook for dinner. After years of cooking for my family, I can de facto say that there have been times when I lost my creative will in the evening meal department. Now that I have a picky four-year-old to reconsider in the equation, the dilemma has increased to approximately disaster size. He has a list of about 5 items that he'll eat and will not vary easily. In other words, I'm having a rather difficult time seeing easy to prepare meals that will satisfy the whole family. What to do, what to do?

For most busy families, time is the enemy. They plainly don't have adequate time to prepare whatever more than something pre-packaged from a box. I've been there, done that, and I can also say that it gets old, is unhealthy and eventually someone in the house will start to complain anyway. The request here is: Is there a way to couple salutary eating with convenience?

Meat Loaf

Why of course there is! making great meal planning a priority does not have to cause groans from the cook. There are new methods of meal establishment and easy to fix staples available these days that can make you say 'ahhh'. In fact, getting the kids complicated in the kitchen has become another novel way of getting picky eaters to de facto put something other than Pbjs in their sweet tiny mouths. My own tiny guy found a method in one of the cute kid cookbooks I bought him and with his help we made evening meal and he 'ate it!' Wow, I'm a believer.

So, what are some easy recipes for great house meals? Here are a couple of recipes that I've made in the past month that were hits with everybody in the house from grumpy dad to doubting daughter and picky pint-size pouter:

Pepperoni Pizza Quesadillas

8 - 10 inch flour tortillas

2 ½ cups cheddar cheese (I just buy the 10 oz pre-shredded)

1 cup salsa (I tend to go with mild since it's a meal for the whole family)

½ cup chopped green olives, drained

1 container of sliced pepperoni

Preheat oven to 400 F. Place 2 tortillas on a cookie sheet and top each with cheddar cheese. Put another tortilla on top of each cheese covered tortilla and bake for 5 minutes. Take out of oven and press down on tortillas with a spatula. Top with salsa, olives, some more cheese and pepperoni. Put back in oven and cook for 5 minutes more or until the edges are brown and crispy and the cheese is melted on top. This is great with a garden salad.

C.J.'s tiny Meat Loaf

1 egg

1 lb ground beef or turkey

1 cup oatmeal

1 onion, grated (I use onion flakes to save time, tastes great)

1/3 cup ketchup

¼ cup Parmesan cheese

1 tsp salt

¼ tsp pepper

Extra ketchup for the tops

Preheat oven to 350F. Lightly spray 8 muffin cups with cooking spray. couple ground meat, oatmeal, onion, egg, ketchup, Parmesan cheese, salt and pepper in a bowl; mix well with your hands or a spoon. Divide the meat composition into 8 balls and put each into a muffin cup; press down lightly. Put more ketchup on the tops of each tiny meat loaf. Bake for 30 minutes or until no longer pink inside. Replacement to paper towel covered plate to drain and then serve with mashed potatoes, green beans and carrots...yum!

These recipes have gone over great in my house, and I bet they'll be devoured well in yours too. making house meal establishment and house meal time a priority will encourage children to fabricate salutary eating habits - an prominent key to good health as adults. By making meal time less stressful you can focus on the joys of spending time together instead of the hassles of establishment meals. Every member of the house can enjoy evening meal time again.

How to Make a Potato Stuffed Meatloaf For Family Dinners

Monday, May 2, 2011

If you enjoy eating meatloaf but looking for an old-fashioned twist to the traditional meatloaf recipe, I think you will enjoy this vintage 1935 recipe that I received 20 years ago from my great aunt.

Over the years, I adjusted the recipe a little bit to modernize it and to reduce some of the calories.

Meat Loaf

Potato Stuffed Meatloaf

1 1/2 lbs. lean ground beef

1/2 lb. lean ground pork

1 tablespoon onion, minced

2 tablespoons horseradish sauce

1 egg, lightly beaten

1 teaspoon table salt

1/2 teaspoon black pepper

In a large bowl, combine the ground beef, ground pork and onion. Stir in the horseradish sauce, beaten egg, salt and pepper until the mixture is thoroughly combined. Place the mixture in a 9" by 5" by 3" loaf pan and pat it down so that it measures approximately 1" thick in size.

Potato Stuffing Topping

4 cups mashed potatoes

1/2 teaspoon table salt

1/2 teaspoon paprika spice

2 tablespoons pimento, minced

2 tablespoons green pepper, finely chopped

2 egg yolks, lightly beaten

1/4 cup cold milk

In a large bowl, combine the mashed potatoes, salt, paprika and pimento together. Stir in the finely chopped green pepper, beaten eggs and cold milk until mixture is thoroughly combined. Pour the potato mixture on top of the meat mixture. Bake for 1 hour in a 350 degree oven. Remove from oven and let stand for 5 minutes before serving.

Optional: If desired, sprinkle your favorite cheese on top and place back into the oven for 5 minutes to melt the cheese. To cut calories, I would suggest a reduced-fat shredded cheese. If you like bread crumbs, you could sprinkle a 1/4 cup of crumbs on top and then sprinkle your shredded cheese on top of that.

Ground Meat Recipes My Family Loves

Monday, April 25, 2011

I am a ground meat lover. I love hamburgers, meatloaves and more. I do rotate between ground beef and ground turkey when I cook as my daughter prefers the poultry over the beef.

While I love to cook, I also like to prepare dinner in under an hour, eat and then have the rest of the evening to do the things I want to do.

Meat Loaf

I'd like to share three ground meat recipes with you, all that my family loves.

I remember having meatloaf as a child. It was one of my least favorite meals. Then about a year ago, my dad was in the hospital and the cafeteria served a turkey meatloaf. It was excellent. I knew I wanted to try and make this at home. What I ended up with was a Parmesan meatloaf that we loved. I do use ground turkey to make this, so it does come out very soft. Here is the ingredient list:

1/2 cup spaghetti sauce
1 pound ground turkey
1/2 cup bread crumbs
1/2 cup Parmesan cheese
1/4 cup chopped onion
1 egg, beaten

Set aside 1/4 cup sauce and 1/4 cup cheese. Mix remaining ingredients together and form into loaf. Place into loaf pan and cover with remaining sauce and cheese. Bake at 375 degrees for 45 minutes.

I make this in just 10 minutes, then bake it for the 45 minutes. This dish is ready in under one hour.

We make our own quick and easy sloppy joes. My kids like ground beef mixed with barbeque sauce and served on a roll. I crumble the meat into a skillet and slow cook the beef. After draining the beef I add the barbeque sauce and simmer for ten minutes. When I make this for myself, I chop up some onion and garlic and saute that right in. We toast the buns, serve with a salad and this is a very quick and easy meal.

I happen to love Mexican food. We make a taco casserole that is very quick to prepare and quite tasty. Here's a list of the ingredients needed:

1 pound ground meat
1 cup Monterey jack cheese, shredded
1 cup Colby cheese, shredded
2 cups crushed tortilla chips
1 cup prepared salsa
1/2 cup mayonnaise
2 teaspoon chili powder
1 tomato, chopped
1 small can sliced black olives
2 cups shredded lettuce
1/2 avocado, sliced

Brown and drain ground meat. Add in the mayo, salsa, and chili powder. Mix well. Pour half the meat into a casserole dish. Place one cup of the chips on top and half of the two cheeses. Repeat these layers and bake for 20 minutes at 350 degrees. Cut into portions. Once on plate, add lettuce, tomato, olives and avocado on top.

We buy the multi packs of ground turkey at Costco. I'm a happy camper to have at least a few meals a week with ground beef/turkey.

Feeding Your Family on Vacation - On a Budget!

Friday, January 7, 2011

When vacationing with a family on a budget, what you choose to eat and drink can make or break the piggy bank. While most people plan for hotels and activities when budgeting for their vacation, they don't often consider the cost of eating while on vacation, which can be considerably more than the cost of eating at home! Here are some tips to help you eat well while on your next family holiday without overspending.

Breakfast Ideas
When booking your accommodations, it's a great idea to look for hotels that include a breakfast in the price. If this is not possible, make sure that your hotel room has at least a small fridge. If you have a fridge, you can go to the grocery store and buy a carton of milk, some cold cereal and a bottle of juice for a very inexpensive breakfast. Don't forget to check if your hotel room has dishes available for use, otherwise you can bring some lightweight plastic bowls, cups and utensils with you in your suitcase.

Lunch Ideas
Consider going out for a lunch-time buffet (cheaper than at supper-time) and having your big meal at lunch-time. If you can afford to eat out occasionally, lunch time is probably the most economical meal to purchase. Look for kids' menus, and check the ages that are included. If you are unsure about a particular restaurant, don't be afraid to ask to see the menu before you commit to eating there! If your hotel room has a fridge, consider buying a loaf of bread, some lunch meat and fruit for a very economical lunch (and healthy too!).

Supper Ideas
If you're able to book a hotel with a kitchenette, you can cook your own suppers, just as you would at home. Most hotel rooms at least have a microwave, making microwave dinners another cheaper alternative than eating out. It all depends on your budget, and what you've eaten for your other meals and snacks, you may be able to afford to eat out for supper - just make sure you check the menus and prices. You might also want to ask the locals for family restaurants in the area, which are usually a good bet for the budget-conscious.

Snack Ideas
It's amazing how buying drinks and snacks can add up! It's crucial that you take a backpack with you, wherever possible, with water bottles and items like granola bars or apples. At the very least, if the places you are visiting do not allow you to bring your own snacks, bring some water bottles! Buying water at $3 a bottle for a family is definitely an unnecessary expense!

Some other ideas for all meals and snacks include asking around for local food markets, wherever you are staying. You can also check out our website's "Where to Eat" section for the country you are visiting to find out some tips for your specific family vacation destination. This section includes tips by families just like yours, who have already vacationed in the country you are planning to visit. You might even want to check out our "Trade Recipes" section and try cooking some authentic local dishes while on vacation. Please remember to share any great recipes you discover on your holiday as well!

With a little planning you can eat very economically while on vacation, and still enjoy the best of what your family vacation destination has to offer! And with the money you save by eating frugally, you can still hopefully afford to eat out a few times and enjoy the local cuisine, which is always a memorable part of any family vacation!

A family camping menu should be:
Easy and quick to prepare.

Wrap ribs in heavy-duty foil, heat, open a can of corn and serve with ready-made coleslaw and potato salad. First night is celebration night. DAY 1 ==========

Breakfast:
Blueberry Pancakes, sausage and eggs

Lunch: Chili dog and leftover coleslaw/potato salad

Dinner:
Grilled marinated steak tips, baked potatoes & camping onions. If no grill: Easy Pork Chops and bread rolls

Dessert:
S'mores

DAY 2
==========

Breakfast:
Cereal and fruit, corny cakes

Lunch:
Tortellini and tomato sauce

Dinner:
Meat loaf sandwich & Italian Wedding Soup (canned)

Dessert: Mini Camping Pies

DAY 3 ==========

Breakfast:
French Toast, sausage and eggs

Dinner:
Ham, beans and baked sweet potatoes

Dessert:
Peach Mallows

DAY 4
==========

Breakfast:
Pancakes, sausage and eggs

Lunch:
Foil-wrapped Surprise (Whatever's left in camp kitchen)

Do we stick religiously to this menu plan?
Of course not. But being prepared gives me the freedom to be more creative and flexible.
The recipes are pretty easy to guess. If you need the camping recipes, tips and shortcuts for this 4-day family camping menu, email us at camping_menu@aweber.com and it will be sent out to you automatically.

The menu does require a camping stove. If you don't own a camping stove, watch our video on the 4 criteria to look for in a camping stove [http://www.joyofcamping.com/camping-gear/camping-stoves/camping-stove-criteria/].
