Delicious Recipe for Slow Cooked Pork Ribs

Saturday, October 15, 2011

Pork ribs are a favorite meal, but sometimes cooking them exactly right can be a challenge. If you have ever tried your best to cook pork ribs but still failed, then you really should take a look at this yummy slow cooker pork rib recipe.

The history of slow cooking pork began long ago, although the exact origins are rather hazy. In the period before the Civil War in the US, pork was a main stay in the average diet. Hogs were easy to raise, and every part of the animal was utilized, leaving nothing to waste. As a result, the barbecue became a popular event in communities, especially on plantations, with everyone taking part in some way. Not to be left out, politicians as well took advantage of the 'neighborhood' barbecue event and used them as a way to gain voters loyalty.

Pork loin cuts of meat are where you will find the tender, lean pork cuts. Because they are so lean, pork loin can easily dry out if cooked too long. This however, does not need to be a concern if cooked in a slow cooker with the right amount of liquid or sauce.

While your pork ribs are slowly cooking along, why not add a nice side of home-made potato salad to the menu? There are many kinds of potato salad to choose from, but one of my favorites is the basic American style potato salad that will be a great addition to your pork ribs dinner.

Easy Slow Cooked Pork Ribs

3 lbs country-style boneless pork ribs
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup chopped onion
3/4 cup apple butter
3 tablespoons brown sugar
2 cloves garlic, finely chopped

Rub salt and pepper on ribs. Place in the slow cooker. Cover with onions. Mix remaining ingredients and pour over onions. Cover and cook on low for 9 hours.

Basic American Potato Salad

4 cups russet potatoes cooked, peeled
1 cup celery, chopped
1 cup onions, chopped
5 eggs hard-cooked, chopped
1/2 cup sweet pickles chopped
2 tablespoons pimento chopped
2 teaspoons salt
Black pepper to taste
3/4 to 1 cup mayonnaise real

In a large bowl combine potatoes, celery, onion, eggs, pickles, pimento, salt, and pepper. Gently stir mayo into potato mixture, do not mash the potatoes. For best results: cover and chill for an hour before serving.

Your next family get-together or bbq will be a huge hit with these delicious foods. Enjoy!

Make your next barbecue an easy event by slow cooking your pork ribs. Find more slow cooker or crock pot recipes at http://familycrockpotrecipes.com.

Delicious Slow Cooker and Crockpot Recipes: Steak With Vegetable Gravy or Veggie Chowder

Monday, October 3, 2011

Whether you are a very busy cook who needs to use your crockpot or slowcooker to save time or you just enjoy knowing you can have your meal ready in minutes when you are ready to eat, these crockpot or slowcooker recipes are sure to become family favorites. The Round Steak with Vegetable Gravy is almost a meal by itself. Add a salad and crusty bread, if desired, and you are ready to feel your family a nutritious and hearty meal. The Veggie Chowder is perfect for those who prefer vegetables without meat. If you are a strict vegetarian and don't want to use the chicken and beef bouillon, you can substitute an equal quantity of vegetable broth.

ROUND STEAK WITH VEGETABLE GRAVY

3/4 cup finely chopped carrot
3/4 cup finely chopped onion
1/2 cup finely chopped celery
1/4 cup finely chopped green bell pepper
1 (2 lb) round steak about 3/4-inch thick
salt and pepper
1/3 cup water
1/2 cup catsup
1 tbsp cider vinegar
1/2 cup cold water
2 tbsp all-purpose flour

In crockpot or slowcooker put the carrot, onion, celery and bell pepper. Trim excess fat from the round steak and cut it into 6 equal-sized pieces. Place the meat atop the vegetables. Sprinkle with salt and pepper. Combine the catsup with the 1/3 cup of water and vinegar; pour mixture over the steak. Place lid on the pot and cook on low setting for 8 to 10 hours.

Remove the meat from the cooker. Skim the excess fat from the cooking liquid then pour the vegetable/liquid mixture into a saucepan. Return the meat to the cooking pot.

Slowly pour the cold water into the flour blending well; stir into the vegetable mixture. Cook and stir until thickened and bubbly. Place the meat on a serving platter. Spoon some of the gravy over the meat. Pass the remaining gravy, if others want more. Serves 6 to 8 people.

VEGGIE CHOWDER

1 can stewed tomatoes, chopped, undrained
3 stalks celery, diced
2 medium potatoes, diced
2 carrots, sliced
2 medium onions
1 can green beans, drained
1 can corn, drained
1 can peas
2 beef bouillon cubes
2 chicken bouillon cubes
3 cups water

Put all of the vegetables into the crockpot or slowcooker. Combine the bouillon cubes with the water until dissolved; pour over the vegetables in the pot. Place lid on the cooker and cook on low for 12 or more hours.

Enjoy!

How to Make a Delicious Farmer's Ham Loaf

Wednesday, September 28, 2011

Combining ground ham and lean ground pork into a ham loaf makes a very tasty treat. One of my late aunts used to make delicious ham loaf and this recipe is pretty close to what she made. She was a delightful aunt who could turn any kind of leftovers into a delicious meal and this is how her ham loaf came to be. This recipe has a sweet and sour sauce that only adds to the delicious flavor of this loaf. The recipe calls for 1/2 cup of Splenda brown sugar blend which makes it suitable for diabetics. If you don't need to watch your sugar intake, you can use 1 cup of brown sugar instead. This is an updated version of an old, old recipe. This recipe is very suitable for diabetics, too.

FARMER'S HAM LOAF

2 lbs ground ham

2 lbs ground lean pork

1 cup fine dry bread crumbs

2 eggs

1 cup milk

Preheat oven to 350 degrees.

In a large bowl combine the ground ham, ground pork, and the bread crumbs. In a small bowl, beat the eggs and stir in the milk. Add the milk, egg mixture to the meat blend. Mix together well and form into a loaf. Place loaf in a pan.

Sauce:

1/2 cup Splenda brown sugar blend

1 tbsp prepared mustard

1/2 cup cider vinegar

1/2 cup water

Place all the sauce ingredients into a small saucepan and bring to a boil over medium heat, stirring to blend and melt the Splenda blend. Pour the sauce over the ham loaf. Bake in a 350 degree oven for 1 1/2 to 2 hours, basting with the sauce frequently.

Enjoy!

Soup - A Delicious Crab & Corn Bisque

Tuesday, September 20, 2011

I still remember when my workmate told me she'd be bringing me a crab bisque soup the next day. She had gotten the recipe from her mother in law and it was one of her favorites. Once I tried the soup, I knew I wanted to take that recipe and alter it to my families taste.

In a saucepan, melt 1/4 cup butter over medium heat. While the recipe says you can use either butter or margarine, there is a taste difference and I prefer the butter taste. Once melted, stir in two cups of milk and two cups of whipping cream. Add salt, white pepper and mace (a seasoning found in most grocery stores) to taste. Continue heating on medium heat until almost boiling. Stir as the soup heats. Next, add in 1/4 cup of finely chopped celery, one can of corn, drained and 1/4 cup of cracker crumbs. Reduce heat and simmer for about ten minutes. Add in one pound of imitation crab meat and two tablespoons of sherry. Heat through and serve.

I'd like to share one more variation of this soup using chicken broth:

4 cups chicken broth
1 pound imitation crab meat
2 cans creamed corn
2 cups chopped celery
2 cups chopped onion
½ cup chopped carrots
2 cups heavy cream
Salt, pepper and Tabasco to taste

Pour the chicken broth into a soup pot. Add in the vegetables and allow to cook until vegetables are soft. Allow soup to cool and puree in a blender. Strain back into the soup pot. Puree the corn and strain into the soup pot. Add in the cream, salt, pepper and Tabasco. Simmer until heated through. Add in crab and allow crab to warm. Spoon into bowls.

If you like the taste of potatoes, add in one can of potato soup and remove one can of the chicken broth.

Crab Bisque can also be made with a tomato based broth. I have a very simple crock-pot recipe for crab bisque.

Place one pound of imitation crab meat, one can of condensed tomato soup and one can of cream of asparagus soup in your crock-pot. Cook on high three hours. Uncover and add 1 cup of half and half. Re-cover and cook on high one more hour.

If you want vegetables in the soup, consider adding in carrots, celery and onions. Strain before serving to remove these vegetables.

I love serving this soup with homemade garlic bread. I use a French bread loaf. I melt the butter with garlic and onion and then brush onto the bread and toast under the broiler.

Easy Ground Beef Recipes That are Healthy and Delicious

Thursday, May 19, 2011

Looking for some healthy and easy ground beef recipes that do not require a lot of time to make? Below are 3 delicious ground beef recipes that are filling and real crowd pleasers.

Just because you are cooking with ground beef, does not mean it has to be unhealthy. Most of the ground beef you find in supermarkets today is loaded with fat, cholesterol and hormones, but more and more supermarkets are starting to provide healthy organic meats to consumers, so hopefully you should be able to find healthy ground beef in your area.

To make the following recipes even healthier try and use all organic and low sodium ingredients.

If you happen to live near a Trader Joe's, by all means shop there. The prices are fantastic and they carry a variety of healthy organic meats and other fine products.

THE RECIPES:

EASY SALISBURY STEAK RECIPE

Here is a little tip to keep in mind as you are making this delicious ground beef recipe. There is a chance that your ground beef steaks can fall apart while cooking. To prevent this from happening, form your steak patties and put them in the refrigerator for 30 minutes or so before you start cooking. This will help hold your steaks stay together.

Ingredients:

1 1/2 pounds lean ground beef

1 egg

1 tablespoon Worcestershire sauce

1 small onion finely chopped

1 garlic clove chopped

1 tablespoon montreal steak seasoning

Salt and Pepper to taste

3 tablespoons of extra virgin olive oil

1 small package of freshly sliced portobello mushrooms or by them whole and slice yourself

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups beef stock

Directions:

1. In a large bowl combine the ground beef, egg, garlic, onion, steak seasoning, Worcestershire sauce and salt and pepper. Mix well with your hands. From the mixture, make steak shaped patties that are about 2 inches thick.

2 Heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the ground beef patties and cook about 4 minutes per side until the outside of the steaks are nicely browned and the juices run clear. Remove the steaks and cover with foil to keep them warm.

3 Add the rest of the olive oil along with the butter to the same pan. Add your mushrooms and then cook over medium heat until they are tender. Approximately 5 minutes. Season the mushrooms with salt and pepper to taste.

4. Add the flour to the mushrooms, mix and cook for about 2 minutes. Slowly add in your beef stock. Stir and cook until your sauce has thickened.

5. Pour gravy over steaks and serve.

EASY ITALIAN STYLE MEATLOAF RECIPE

I grew up in an Italian Family and I cannot think of a better way to cook meatloaf. Enjoy this delicious ground beef recipe using fresh italian herbs and garlic.

Ingredients:

1 1/2 pounds lean ground beef

2 eggs

1 7 ounce jar roasted red peppers chopped

1 onion chopped

2 cloves of garlic chopped

1 cup of bread crumbs

1 teaspoon of salt

1/2 teaspoon of freshly ground black pepper

1 tablespoon balsamic vinegar

1 tablespoon Worcestershire sauce

1/2 cup grated Parmesan Cheese

2 tablespoons chopped fresh basil

1 tablespoon chopped fresh parsley

2 cups of prepared tomato sauce

2 tablespoons extra-virgin olive oil

Directions:

1. Preheat your oven to 350 degrees F.

2. Heat a medium sized saute pan over medium heat and add 1 tablespoon of olive oil. Add your onion and garlic and saute until soft. Remove and set it aside on a plate to cool.

3. Grab yourself a large mixing bowl.

4. Add the cooled onions and garlic along with the the rest of your ingredients, except the tomato sauce, and combine. Mix together well with your hands and form into a loaf and add it to an oiled oven safe tray. Top the loaf with 1 cup of the prepared tomato sauce. Make certain that you spread the tomato sauce evenly over the top of the loaf.

5. Bake for about 1 hour or when the internal temperature of the meatloaf reaches 160 degrees F. Remove from the oven and let it sit for about 5 minutes. Slice it up and serve.

Heat the remaining tomato sauce if desired and use for dipping.

GREEK STYLE HAMBURGER RECIPE

For our last recipe why not make some delicious burgers? The preferred method for cooking these burgers is on the grill, but they will still be quite tasty if fried on the stovetop.

Greek Style Hamburger Ingredients:

1 pound of lean ground beef

1/2 cup crumbled feta cheese

1/2 cup chopped greek olives

1 small red onion chopped

3/4 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 package of hamburger rolls or pita bread

Hamburger Sauce Ingredients:

1 (16 ounce) container low-fat plain yogurt

1 tablespoon chopped fresh mint leaves (more or less to suit your taste)

1 tablespoon chopped fresh parsley (more or less to suit your taste)

1 clove of garlic minced (add more or less to suit your taste)

1 tablespoon of olive oil

2 teaspoons of lemon juice

1/2 cup peeled, seeded and finely diced cucumber

Sauce Directions:

Prepare the sauce for your burgers first and put in the fridge until your burgers are done.

1. In a mixing bowl, combine your olive oil and lemon juice.

2. Now add in your yogurt making sure that you mix it well with the olive oil.

3. Add your garlic, cucumbers, parsley and mint leaves and stir well.

Burger Directions:

1. In a large skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the chopped red onions and cook until tender, about 5 minutes. Put the onions aside into a large mixing bowl and allow them to cool.

2 To the same mixing bowl, add your ground beef, feta cheese, olives, oregano, salt and pepper and combine well.

3. Form hamburger patties to desired thickness.

4. Fry your burgers in the same skillet as the onions, or cook on the grill to desired doneness.

5. Spread the prepared sauce on the rolls or inside a pita.

6. Add burgers and enjoy!

There you have it. Three healthy and easy ground beef recipes that any home cook can prepare. I really hope you enjoy these recipes. Remember to use all organic ingredients if at all possible. Happy Cooking!

Delicious Meatloaf Recipes in Almost Every American Home

Tuesday, March 22, 2011

Whatever the reason for gracing your table with meatloaf may be, for a quick family meal or a sumptuous dinner with the family, the version of the meatloaf recipes vary from one cook to the other. Each individual has a different version of their favorite meatloaf preparation. Meatloaf is the best option and hence it is a common sight in most homes, especially where both members are working.

Earlier people considered the meat loaf as a big lump of hard meat on the table and usually avoided it for another delicacy. However, with the increase in meatloaf recipes available there are many choices like ground bacon or turkey, pork etc. that one can use to make a perfect meatloaf that everyone can enjoy. You can use healthier options instead of the regular oatmeal and fatty beef.

Meat Loaf

Meatloaf recipes are suitable for baking or cooking in crockpots. Crockpot cooking is very easy and economic for working people who love to have a hot meal on returning home from work. In fact the recipes cooked in crockpots taste much better and more tender than baking.

You can think of making a nutritious and delicious meatloaf recipe using chicken, cheese and veal to make the best meatloaf recipes. Meatloaf made from these ingredients has a good flavor that makes even vegetarians try their taste buds at it. However, these recipes are such that they are very versatile and the ingredients depend on the taste of the family. If you like something added to it that is more spicy, then do it, or if you like a better softer version instead of beef, then substitute the beef for your favorite choice.

However you make changes with the ingredients your meatloaf recipe will taste exactly the way you want it to taste. These recipes have come a long way from its traditional preparation and use of ingredients. Today people have various recipes and tastes to add to their recipes.

This article would be incomplete if a simple meatloaf recipe is not added to it. Here is the recipe for the best meatloaf. You will need 2 eggs; quarter cup water, quarter cup ketchup, half cup minced onion, 1 tsp salt, 1 tbs. Worcestershire sauce, 1 cup ground breadcrumbs (optional), 2-3 pounds ground beef or meat of your choice.

Put together brown sugar, ketchup and a bit of honey and form a thin paste for the glaze and keep aside. Beat the eggs in a bowl; gradually add the ketchup, minced onion, water, sauce and salt. If you wish to use breadcrumbs, add the bread crumbs as well. Using a fork add the ground meat and the rest of the ingredients.

Pour the contents into a bread loaf and place is on a cake pan or a roaster. Cover with silver foil and bake @ 350 degrees for about one hour or till the preparation is not raw. There could be a lot of juice draining which may have to be drained once while baking. After the baking process is done, remove the silver foil and apply some glaze on the sides and the top of the loaf and turn on the oven to broil. Immediately when glaze starts to bubble turn off the oven. Meatloaf is ready. This is one of the best meatloaf recipes.

Vegetarian Italian - Delicious Options For Meat Lovers

Sunday, January 16, 2011

Everyone agrees that eating less meat is healthier -- for you, for your pocketbook, for the planet. But I've tried to adopt vegetarianism and found it doesn't work for me. I never really feel good on a 100% vegetarian diet.

I believe that each body is different, and that some people simply need meat protein. So how do you balance that need with your desire for a healthier lifestyle?

Meat Loaf

One excellent answer is centuries old -- vegetarian Italian cuisine! Since Roman times, Italian food has mainly focused on eggs, cheese, bread, olives and fresh seasonal vegetables. The Romans reserved meat and fish for special occasions.

As time went on, however, meat-eating became a privilege of the wealthy. Country folk continued to grow their own food, and usually raised cattle as a source of milk and cheese, not meat.

In the 1980s, Italy gave birth to the international Slow Food movement, which strives to preserve traditional and regional cuisine, and promotes farming methods in line with the local ecosystem.

These things, and more, have contributed to a culinary tradition rich in meatless options.

So why not go beyond pizza and pasta, and try one unusual vegetarian Italian dish this week? Here are a few suggestions to get you started:

Polenta

A strange but yummy cornmeal porridge that's easy to make. A cousin to American grits, polenta is a staple in northern Italy and makes a satisfying winter meal. You can find it in most grocery stores, with directions on the package.

A soft mound of polenta can be the base for cooked greens, sauteed portabello mushrooms or any vegetable. It can also be baked in a loaf pan, then thinly sliced. Sliced polenta can replace bread or lasagna as a base for almost any filling, including pesto, mozzarella, tomato sauce and roasted peppers.

Risotto

A delicious creamy rice dish that can be enhanced with almost any vegetable. It must be made from Arborio rice, which can be found in most grocery stores. Risotto has a reputation for being tricky, but the new oven-baked and crockpot methods are almost effortless. Favorite vegetarian additions include asparagus, mushrooms and artichoke hearts (frozen work fine). Butter and freshly-grated parmesan cheese add flavor and texture.

Toward a More Creative Cuisine

My purpose is not to convert you to vegetarianism, but to inspire you to eat more creatively. I do recommend eating bread, butter and cheese in moderation, and as close to homemade as you can find. Avoid low-fat versions. Try fresh mozzarella, the type that comes in water. Frequent artisan bakeries and farmers' markets. Eat vegetables in season, not those flown in from the opposite hemisphere.

When you concentrate on fresh, whole, local ingredients, you'll discover that your cravings for fat and sugar decline. Centuries of eating this way can't be wrong!

Friday, October 1, 2010

If you are someone who likes Beef Jerky and other deli meats you are already paying too much for them at the store. The fact is that you can make Jerky and other tasty meats at home for much less cost.

Believe it or not it does not take a lot of work to produce your own deli meats at home if you have the right equipment. Many people use their own ovens to produce most of it. You also will not have to make lunchmeats everyday if you make enough once in awhile.

The types of meats you can make at home include different types of loafs like pickle loaf, olive loaf, bologna, different types of sausages, kielbasa, salami, summer sausage, pepperoni, different types of Jerky, snack sticks, just to name a few.

The equipment you will need to make your own meat is minimal. You will need a grinder to grind large amounts of meat and you will need the casings if you are making anything that is tubular like sausage. You will also need a kitchen oven or a smoker and a way to get the meat into the casings. A good idea is to buy a grinder because it can be used for many things and it has attachments that will help you stuff the casings.

Making meats at home is a lot of fun and children love jerky for snacks. You can find hundreds of recipes on the Internet for all types of homemade meats as well.

If you have looked at deli meats in the grocery store you know that the average Bologna can cost you about $5 for just a few slices. Beef Jerky can start out at $4 or $5 for a few ounces and get higher depending on the flavors that are added.

Many people already make homemade breads and they do canning of vegetables and fruits so making meats at home just adds to your savings. When you make meat at home you know what ingredients you are getting and you won't have as many fillers as with other meat products.

One of the best reasons to make meats at home is to save you money at the grocery store. Homemade meats are more flavorful; they are prepared with love and they last a long time. You can take advantage of sales in the grocery store and stock up on the meats you like. You can then turn them into deli meats that your entire family will love.

These are the ingredients you need. Two pounds of Italian sausage, 2 onions, 4 red pepper, water, salt and pepper and a few bay leaves.

This delicious dish is dead on my family for a year Italian friend. I'm not Italian and never ate much Italian food growing up, but when my mother made this dish for our family, I loved. If you like sausage, once you taste this recipe sausage and peppers, are you going to prepare for your family andFriends often. When I take this dish for a potluck dinner, I always get rave reviews! If you work all day, you can prepare sausages, peppers and onions in the night and put everything in crockpot in the morning. When you get home, your house will smell wonderful, and dinner is ready!

The dinner menu is very simple, sausage and peppers, Italian green beans with mushrooms and a crusty loaf of white bread. You will be amazed at howsatisfying, filling and delicious meal is present. The peppers and green beans with vitamin C and antioxidants are downloaded or if evidence of garlic to promote a healthy, also helps to prevent cancer by stimulating the immune system and, of course, the sausage is delicious!

If you are buying, you must obtain a number of things for the meal. In the meat section, look for hot Italian sausage. The sausage must be the Italian one, and no otherType. If you do not know if you like hot sausage, you can use sweet or mild Italian sausage. Sometimes I use a hot book, and a pound of candy. Choose the type of sausage tastes of your family. The original recipe calls for all the sausages. You need a total of two books.

Then go to service products. Choose four or five large peppers Nice. My mother used the green, but you can also change the mix of red or orange, or evenfor more color. A green pepper is simply a mature red, yellow or orange. This mature peppers contain more nutrients and vitamins than their counterparts in green unripened. Now choose two large yellow onions, 2 ½ -3 pounds fresh green beans, a quart of fresh mushrooms and a clove of garlic. Finally, you can find a crust of bread, bread baking in Nice. If you do not have butter and onion powder for the home, these items sell for now.

When you come home, put yourFood in the refrigerator until ready to prepare meals. Beans, peppers, mushrooms and onions can be prepared in advance if you wish. Just wash and cut green beans at each end, and cut the core, seeds, and cut all the peppers cut into strips. Rinse the mushrooms lightly rinse with cold water, dirt and dry with paper towels. The onion slices. Keep all the vegetables separately and covered in refrigerator.

When ready to bake your ItalianFestivities will need to cut the sausage is cut into pieces about 1-1/4 inches long. All in a large frying pan without adding water or oil and cook long and slow. Place the sausages are cooked. It will take about an hour. While the sausages are jumping, cook the beans. Boil, steam or microwave. Add a little 'butter, salt and water in a microwave-proof container, whether it is microwave. Make sure the beans are tender but still crisp (about 8-10 minutes after boiling).Microwave ovens and steam varies from a few minutes or so watching.

Then cut 3 cloves of garlic, separate the bulb, and skin and a fine. Fry the garlic in a large frying pan and cook the mushrooms with about 1 ½ tablespoons of butter. Drain the beans, when you pan and add the cooked. The following season to taste with salt and pepper and onion powder (about ½ teaspoon of each spice is a good starting point). Heat the beans and court dressand keep warm over low heat while you finish the sausage and peppers.

If your sausages are browned and cooked, drain the pot of its excess fat and add the peppers and onion slices. There is also the season to enjoy a half to three quarters cup water, salt and pepper. Fry down about ½ hour (or until the peppers are tender but still crisp). You can not go wrong with the cover pan, if you want to keep splashing.

Finally, add the finishing touch to yourfabulous Italian Sausage and Peppers celebration. Set the table and pour your favorite drink. With a bread knife, cut the bread slices. Take butter from refrigerator to soften. Add the sausage and peppers and green beans and mushrooms on each plate. So sit back, relax, eat and enjoy the compliments!
