3 Cheap Meals Using Ground Beef Recipes

Most of us are always looking for cheaper ways to feed out families but still giving them meals they will eat and enjoy. These simple ground beef recipes, not only gives a family of 4, three hardy meals but will leave them wanting more.

This one basic recipe, using 2 pounds of ground meat, can do 3 meals for a family of 4. You will need to divide your meat into these portions.

[1] use one pound of meat for the meat loaf
[2] use 3/4 pound of meat for meat balls [12-14 small]
[3] add 1/4 pound of meat to the basic red sauce recipe for meat sauce.

You can mix the meatloaf and meat ball recipe at the same time. Use one for tonight's dinner, then freeze and save the other for dinner later in the week.

Using a medium bowl, mix 1 3/4 pounds of ground meat, one 14 oz can of sloppy joe sauce. I have found using my hands will get this job done in a jiffy. If the mixture feels a little dry, add 1/4 cup ketchup. When you have finished mixing, place one pound meat in a small loaf pan. Pat down the top, forcing any air pockets out of the mixture. Leaving the air in the loaf will cause uneven cooking and take away from the visual effect of your food. Spread 2-3 tablespoons of ketchup over the top of the meat loaf, then place in a preheated 350 degree oven. Bake for 45-50 minutes. Allow the meat to rest for 10 minutes before placing it on a serving platter and cutting. [serves 4]

Taking the remaining 3/4 of the meat mixture, and begin making walnut size meat balls. It should make between 12-14 balls. When you are done making the meat balls, you will need to roll them in 1/2 cup of Italian Bread crumbs. The crumbs will help hold them together during the cooking process.

Heat one inch of oil in a heavy skillet, set to medium high. The oil should be hot enough to cause a sizzle if a small amount of water is dropped into it. Place the meat balls into the oil slowly as you do not want to be splattered with hot oil. Leave room around the meat balls so you can turn them for cooking on all sides. When they have been browned on all sides [about a minute for each side] place them on a paper towel or brown paper bag to drain. Repeat until all meatballs are cooked.

These can be cooled and frozen for future use, such as Meatball Subs.

Meat Sauce instructions...

Heat 2 tablespoons of oil [olive oil, canola, or vegetable] in a large skillet.

Add 1/2 cup chopped onions, 1/4 cup chopped red or green peppers, 1/4 cup finely chopped celery, 2 cloves minced garlic and cook until the onions are translucent. Stir often, so the garlic will not burn.

Add 1/4 pound ground meat, breaking it up with a wooden spoon as it cooks until it has turned browned. Add 1 teaspoon Italian spices, 1/2 cup ketchup, 1 six ounce can of tomato paste, one 11 ounce can of diced tomatoes plus one can of water and one teaspoon sugar. Stirring to mingle flavors, let simmer until it gets to the thickness you like.

You now have a meat sauce that can be used with spaghetti, lasagna, or many other favorite pasta dishes.

Looking for some healthy and easy ground beef recipes that do not require a lot of time to make? Below are 3 delicious ground beef recipes that are filling and real crowd pleasers.





Just because you are cooking with ground beef, does not mean it has to be unhealthy. Most of the ground beef you find in supermarkets today is loaded with fat, cholesterol and hormones, but more and more supermarkets are starting to provide healthy organic meats to consumers, so hopefully you should be able to find healthy ground beef in your area.





To make the following recipes even healthier try and use all organic and low sodium ingredients.

THE RECIPES:





EASY SALISBURY STEAK RECIPE





Here is a little tip to keep in mind as you are making this delicious ground beef recipe. There is a chance that your ground beef steaks can fall apart while cooking. To prevent this from happening, form your steak patties and put them in the refrigerator for 30 minutes or so before you start cooking. This will help hold your steaks stay together.





Ingredients:





1 1/2 pounds lean ground beef


1 egg


1 tablespoon Worcestershire sauce


1 small onion finely chopped


1 garlic clove chopped


1 tablespoon montreal steak seasoning


Salt and Pepper to taste


3 tablespoons of extra virgin olive oil


1 small package of freshly sliced portobello mushrooms or by them whole and slice yourself


2 tablespoons unsalted butter


2 tablespoons all-purpose flour


2 cups beef stock





Directions:





1. In a large bowl combine the ground beef, egg, garlic, onion, steak seasoning, Worcestershire sauce and salt and pepper. Mix well with your hands. From the mixture, make steak shaped patties that are about 2 inches thick.





2 Heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the ground beef patties and cook about 4 minutes per side until the outside of the steaks are nicely browned and the juices run clear. Remove the steaks and cover with foil to keep them warm.





3 Add the rest of the olive oil along with the butter to the same pan. Add your mushrooms and then cook over medium heat until they are tender. Approximately 5 minutes. Season the mushrooms with salt and pepper to taste.





4. Add the flour to the mushrooms, mix and cook for about 2 minutes. Slowly add in your beef stock. Stir and cook until your sauce has thickened.





5. Pour gravy over steaks and serve.





EASY ITALIAN STYLE MEATLOAF RECIPE





I grew up in an Italian Family and I cannot think of a better way to cook meatloaf. Enjoy this delicious ground beef recipe using fresh italian herbs and garlic.





Ingredients:





1 1/2 pounds lean ground beef


2 eggs


1 7 ounce jar roasted red peppers chopped


1 onion chopped


2 cloves of garlic chopped


1 cup of bread crumbs


1 teaspoon of salt


1/2 teaspoon of freshly ground black pepper


1 tablespoon balsamic vinegar


1 tablespoon Worcestershire sauce


1/2 cup grated Parmesan Cheese


2 tablespoons chopped fresh basil


1 tablespoon chopped fresh parsley


2 cups of prepared tomato sauce


2 tablespoons extra-virgin olive oil





Directions:





1. Preheat your oven to 350 degrees F.





2. Heat a medium sized saute pan over medium heat and add 1 tablespoon of olive oil. Add your onion and garlic and saute until soft. Remove and set it aside on a plate to cool.





3. Grab yourself a large mixing bowl.





4. Add the cooled onions and garlic along with the the rest of your ingredients, except the tomato sauce, and combine. Mix together well with your hands and form into a loaf and add it to an oiled oven safe tray. Top the loaf with 1 cup of the prepared tomato sauce. Make certain that you spread the tomato sauce evenly over the top of the loaf.





5. Bake for about 1 hour or when the internal temperature of the meatloaf reaches 160 degrees F. Remove from the oven and let it sit for about 5 minutes. Slice it up and serve.





Heat the remaining tomato sauce if desired and use for dipping.





GREEK STYLE HAMBURGER RECIPE





For our last recipe why not make some delicious burgers? The preferred method for cooking these burgers is on the grill, but they will still be quite tasty if fried on the stovetop.





Greek Style Hamburger Ingredients:





1 pound of lean ground beef


1/2 cup crumbled feta cheese


1/2 cup chopped greek olives


1 small red onion chopped


3/4 teaspoon dried oregano


1/2 teaspoon salt


1/2 teaspoon freshly ground black pepper


1 package of hamburger rolls or pita bread





Hamburger Sauce Ingredients:





1 (16 ounce) container low-fat plain yogurt


1 tablespoon chopped fresh mint leaves (more or less to suit your taste)


1 tablespoon chopped fresh parsley (more or less to suit your taste)


1 clove of garlic minced (add more or less to suit your taste)


1 tablespoon of olive oil


2 teaspoons of lemon juice


1/2 cup peeled, seeded and finely diced cucumber





Sauce Directions:





Prepare the sauce for your burgers first and put in the fridge until your burgers are done.





1. In a mixing bowl, combine your olive oil and lemon juice.





2. Now add in your yogurt making sure that you mix it well with the olive oil.





3. Add your garlic, cucumbers, parsley and mint leaves and stir well.





Burger Directions:





1. In a large skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the chopped red onions and cook until tender, about 5 minutes. Put the onions aside into a large mixing bowl and allow them to cool.





2 To the same mixing bowl, add your ground beef, feta cheese, olives, oregano, salt and pepper and combine well.





3. Form hamburger patties to desired thickness.





4. Fry your burgers in the same skillet as the onions, or cook on the grill to desired doneness.





5. Spread the prepared sauce on the rolls or inside a pita.





6. Add burgers and enjoy!

I am a ground meat lover. I love hamburgers, meatloaves and more. I do rotate between ground beef and ground turkey when I cook as my daughter prefers the poultry over the beef.

While I love to cook, I also like to prepare dinner in under an hour, eat and then have the rest of the evening to do the things I want to do.

Meat Loaf

I'd like to share three ground meat recipes with you, all that my family loves.

I remember having meatloaf as a child. It was one of my least favorite meals. Then about a year ago, my dad was in the hospital and the cafeteria served a turkey meatloaf. It was excellent. I knew I wanted to try and make this at home. What I ended up with was a Parmesan meatloaf that we loved. I do use ground turkey to make this, so it does come out very soft. Here is the ingredient list:

1/2 cup spaghetti sauce
1 pound ground turkey
1/2 cup bread crumbs
1/2 cup Parmesan cheese
1/4 cup chopped onion
1 egg, beaten

Set aside 1/4 cup sauce and 1/4 cup cheese. Mix remaining ingredients together and form into loaf. Place into loaf pan and cover with remaining sauce and cheese. Bake at 375 degrees for 45 minutes.

I make this in just 10 minutes, then bake it for the 45 minutes. This dish is ready in under one hour.

We make our own quick and easy sloppy joes. My kids like ground beef mixed with barbeque sauce and served on a roll. I crumble the meat into a skillet and slow cook the beef. After draining the beef I add the barbeque sauce and simmer for ten minutes. When I make this for myself, I chop up some onion and garlic and saute that right in. We toast the buns, serve with a salad and this is a very quick and easy meal.

I happen to love Mexican food. We make a taco casserole that is very quick to prepare and quite tasty. Here's a list of the ingredients needed:

1 pound ground meat
1 cup Monterey jack cheese, shredded
1 cup Colby cheese, shredded
2 cups crushed tortilla chips
1 cup prepared salsa
1/2 cup mayonnaise
2 teaspoon chili powder
1 tomato, chopped
1 small can sliced black olives
2 cups shredded lettuce
1/2 avocado, sliced

Brown and drain ground meat. Add in the mayo, salsa, and chili powder. Mix well. Pour half the meat into a casserole dish. Place one cup of the chips on top and half of the two cheeses. Repeat these layers and bake for 20 minutes at 350 degrees. Cut into portions. Once on plate, add lettuce, tomato, olives and avocado on top.

We buy the multi packs of ground turkey at Costco. I'm a happy camper to have at least a few meals a week with ground beef/turkey.
