Combining ground ham and lean ground pork into a ham loaf makes a very tasty treat. One of my late aunts used to make yummy ham loaf and this method is pretty close to what she made. She was a delightful aunt who could turn any kind of leftovers into a yummy meal and this is how her ham loaf came to be. This method has a sweet and sour sauce that only adds to the yummy flavor of this loaf. The method calls for 1/2 cup of Splenda brown sugar blend which makes it favorable for diabetics. If you don't need to watch your sugar intake, you can use 1 cup of brown sugar instead. This is an updated version of an old, old recipe. This method is very favorable for diabetics, too.

Farmer'S Ham Loaf

Meat Loaf

2 lbs ground ham

2 lbs ground lean pork

1 cup fine dry bread crumbs

2 eggs

1 cup milk

Preheat oven to 350 degrees.

In a large bowl combine the ground ham, ground pork, and the bread crumbs. In a small bowl, beat the eggs and stir in the milk. Add the milk, egg aggregate to the meat blend. Mix together well and form into a loaf. Place loaf in a pan.

Sauce:

1/2 cup Splenda brown sugar blend

1 tbsp prepared mustard

1/2 cup cider vinegar

1/2 cup water

Place all the sauce ingredients into a small saucepan and bring to a boil over medium heat, stirring to blend and melt the Splenda blend. Pour the sauce over the ham loaf. Bake in a 350 degree oven for 1 1/2 to 2 hours, basting with the sauce frequently.
