Quinoa, (pronounced keen-wah) is a seed that is treated as a grain in cooking. Quinoa has been around for centuries but cooking quinoa has becoming more popular in the last few years, largely due to its impressive nutritional profile.

Many experts believe that quinoa is one of the most perfect foods around. It provides a rich source of vegetable protein and slow releasing carbohydrates. A relative of spinach and chard, quinoa is the only "grain" considered to be a complete protein source. It contains all eight of the amino acids that are important for our health. This is especially important for vegans, because no other grain possesses the amino acid lysine which is important for the growth of tissue and their repair. Quinoa is also popular with people trying to lose weight because it is nutrient dense and low calorie. In addition, thanks to the protein, it keeps you fuller longer.

Quinoa can be used for a variety of dishes. Often treated like rice, it is great in casseroles and stir frys. It can also be used in salads, desserts and as a hot breakfast cereal. In addition to using it in any dish that you would normally use rice, you can also substitute quinoa in many dishes where you would use couscous, oatmeal or pasta. My kids love to eat quinoa and cheese in place of macaroni and cheese and I feel better knowing they are getting a much healthier dish. Another way to enjoy the health benefits of quinoa is to use it in place of bread crumbs or oatmeal in meat loaf and meatballs.

Buying quinoa can be a little tricky, especially if you do not live in a large city. While quinoa is becoming more popular, it is not popular enough that regular grocery stores carry it. While some do, you may need to go to a health food specialty store to find quinoa. Another alternative is to order it online. There are many online suppliers of quinoa, including Amazon.com. The good news is that if you store quinoa in a cool dark place it will keep for up to a year, so you can buy it in bulk and stock up.
