• Grains: Always try eating a whole wheat version of your favorite bread, be it a loaf, a bagel or a roll.
• Vegetables: Eat tomatoes, peppers, baby carrots and other colorful vegetables as many as you like. The brighter the vegetable, the more antioxidant vitamin A it contains.
• Fruits: Fruits should be eaten fresh. Fruit has fiber and healthy calories, and you will want to eat less during the day. Juice has fructose which fills up with energy. That's why juice should become a part of a healthy breakfast along with a cereal.
• Dairy: Try low-fat or non-fat milk, non-fat chocolate milk, and low-fat cheese. Basically, any type of cottage cheese or yogurt goes well with fruit.
If you want to avoid facing complicated and often life-threatening consequences of high blood pressure, you may want to ensure that you and your family eat healthy meals that don't pack on the pounds and rise your cholesterol.
Emphasizing healthy food choices can help you enjoy your meals without excessive fat, sugar, and calories. Healthy food choices can be a carry-over from healthy menu and meal planning at home while managing your high blood pressure with diet.
Switching to a diet without excessive fat and salt and staying fit will help you loose weight and can help prevent or at least delay heart-related problems. Along with monitoring and medication treatment, a high blood pressure diet can help control your blood pressure and reduce your risk of stroke, kidney and heart failure and heart attack.

A Cook Needs Good Knives

Kitchen utensils of all kinds abound. Just look in any kitchen store or in the aisles of kitchenware at other retail stores and you'll see an amazing array of items used for cooking. Some kitchen utensils are used only for one very specific task, so may not be used often. However, there are other utensils that are more versatile, and needed and used daily.

Knives Are The Workhorse of The Kitchen

If you do much cooking at all, you'll use not one, but several kinds of knives. Each of these kitchen utensils has a specific function, like chopping, slicing, or filleting food.
However, all knives have pretty much the same parts.

The Major Player - The Blade

The blade is pretty self-explanatory, being the metal part of the knife used for cutting, from the handle to the tip. It's the most important part of the knife, and the quality of the blade determines how well the knife cuts. Good quality blades make it much easy to do food preparation for cooking.

A Better Bolster

The bolster is the small part between the blade and the handle, connecting the two together. Obviously, it needs to hold the blade securely to the handle so the blade doesn't fall off while you're using it.

It's also worth noting, however, that there is an advantage to having a bolster that is not the full width of the end of the blade. That might seem sturdier, but it gets in the way of sharpening the blade. A bolster that doesn't reach clear to the edge of the blade is preferable for that reason.

The Whole Tang

The tang is an extension of the blade. It runs through the middle of the handle and not only provides a way to attach the handle, but it helps give the knife a good balance. It also strengthens the knife and makes it more durable.

The tang is of varying lengths, and sometimes only runs partway into the handle. The higher quality knives have a tang that runs the full length of the handle, making it strong and well-balanced.

Getting A Handle

You need a way to safely hold a knife, and that's the handle. The handle wraps around the tang and holds it secure. A handle can be made of many different materials, including wood, metal, or various types of plastic.

Not only should the handle should be sturdy, but it should also be easy to hold. You're going to be using a knife a lot, and it should fit your hand well.

Types of Kitchen Knives

Checking the different parts of the knife for quality gives you an idea what to look for when buying a good knife. However, when it comes to buying a knife, there's a tremendous variation of types. Some of these include:

* Cheese Knife
* Chef's Knife

* Filet Knife
* Frozen Food Knife
* Mincing Knife

The Bare Essentials of Knives For The Kitchen

While every knife has a use, most people don't need so many of the more specialized knives. There are a few types, however, that should be found in every kitchen. These are the more versatile knives that can do a number of different types of food preparation.

The Paring Knife

If you don't have any other knife, you need a paring knife. It's a small knife with a straight, sharp blade. Paring knives run from about three to five inches long with a thin blade that tapers to a point at the tip.

This little knife is easy to handle and use. As indicated by the name, it's main function if for paring foods. It's also good for cutting up small items, coring apples and such, and mincing garlic and other foods. Every kitchen should have at least one good paring knife.

The Chef's Knife

The Chef's or Cook's knife is another versatile knife. It comes in several different lengths, running from about 6 inches to 12 inches long. The smaller sized chef knives are called mini chef's knives. These are the best chef knives for people with smaller hands. The larger chef knives are handier for people with bigger hands that allow the bigger chef knives to balance better in their hands.

The chef knife picks up where the paring knife leaves off, and can cut bigger vegetables, fruits and meats. It's great for chopping, dicing, mincing or slicing foods. The bigger size makes it better suited for the heavy duty work, and making thicker slices than a paring knife.

A Serrated Knife

Instead of a straight edge like the paring and chef knives have, the serrated knife has notches in the blade. It can be anywhere from 5 to 10 inches long. It is best used for foods that are hard on the outside, while being soft on the inside. A perfect example is a loaf of homemade bread. The serrated blade is also good for slicing tomatoes and other fruits and vegetables.

Don't Forget A Cleaver

You could make do with a paring knife, chef's knife and serrated knife, but there's one other blade that is highly useful in the kitchen. This knife had a very wide blade which is usually about 6 inches in length.

A cleaver is good for pounding and crushing foods, although it can also be used to chop and shred foods like the other knives. Additionally, this is a good knife for cutting through hard materials like bones in chickens.

Not only can a cleaver pulverize meat, but the flat of the blade can be used to crush garlic and other herbs. It takes up a lot of space in a kitchen drawer, but most cleavers come with a hole near the end of the blade so it can be hung up somewhere out of the way.

Choose Good Quality Knives For The Kitchen

Whatever knives you chose, get the best quality you can. A kitchen knife gets used a lot, so make you food preparation easier by buying good ones.

The more you cook, the more you will appreciate using good quality knives, and may wish to expand your selection to include more types. For a starter kitchen, however, the paring knife, chef's knife, serrated knife and cleaver are good basic equipment.

Every kitchen can use a few good knives.

We all have heard myths regarding many things. I think you all know how I feel about these things. If they aren't true, they end up doing more harm than good. I don't know why we continue to spread myths, but I figure it has to do with lack of education. Myths still exist about diet. I have heard that in some parts of the world that certain meats have myths about them. For example people don't eat cats in Thailand because they think they contain poison. I'm not sure if I would eat a cat, I haven't so far in my life. But, if I was hungry enough I probably would. To what extent do we allow ourselves to get caught up in things that aren't true? Well, for thousands of years we have done it day in and day out. Sometimes myths are based upon real facts that keep us healthy. If we can't explain why people get sick eating a certain thing, then a myth is a great way to prevent it. In this day and age of science there is no need for that. Unless you are in a third world country, they can figure out why you got sick from something.

As well as the meat you may nearly always have some kind of binder like eggs and a starch such as bread or cracker crumbs. Some recipes also include veggies. The crumbs help to bind together with the eggs and also serve as an extender for the beef. Plants are also an extender and will assist in keeping the meatloaf clammy. Plant adaptations make meatloaf even more versatile. I know a lady that cleans her chiller of leftovers each week with meatloaf. Her meatloaf is rarely the same but always good. They do not call it comfort food for nothing. Fried chicken, pot roast, sweet potatoes, any of those easy things that my gramps ( ma ) used to make, bring me right back to being care-free, relaxed kid. I believe the best was the meatloaf. However , what bothers you is that meatloaf can be difficult to cook. In reality, as far as you can recollect, your mummy has used a few spices and aromatic ingredients to make her every meatloaf recipe captivating.
I thought I could bring some of that comfort to my folks with a good old skool meatloaf dinner. Since ma was so secretive of her recipes ( out of pure spite, it looked ), attempting to duplicate hers was out of the query, so I made up my mind to attempt to find the Cracker Barrel meatloaf recipe.
Once again, while setting out to find an official restaurant recipe, I am straight away at a crossroads when a few 'real' meatloaf recipes fill my screen. After the years it took to discover a replacement meatloaf, I was discouraged to think I would need to make one or two meatloafs to find the best one. But I had the time, and figured it might be easily worth it if I could bring back a little of ma to the dinner table.
I usually make pureed potatoes from fresh peeled potatoes to go with the meatloaf. Make a fresh salad with lettuce tomatoes and cucumbers then just add a dressing to the salad and dinner is all set and prepared to serve. Cut the meat loaf in thin slices and serve with mash potatoes and salad.

You've decided the world is a still-dangerous and uncertain place.
You hope nothing goes wrong with the political and economic and business systems now in place that bring to your local supermarket the greatest abundance of food ever available in history.
But it could. A widespread pandemic. War that cuts off oil supplies. An ecological disaster. A local power outage.
So you've decided it only makes good sense to store up some food, just in case. You've already cleaned out your house and have made some empty space on your shelves.
Now what?
The best temperature for storing nonperishable food is between 40 and 50 degree Fahrenheit. Your refrigerator should be around 38 degrees, and of course your freezer is below 32. Freezers are good for storing food for the long term, but you can't count on them. What if your emergency is a power outage? There goes the frozen meat loaf. A freezer should be just one part of your plan.
To keep your food edible and safe, you must protect is from temperature extremes, moisture, light, rodents, insects and bacteria.
You can start out with 72 hour emergency preparedness kits. These contain a enough freeze dried food to feed you for three days. This is the government's recommendation. They believe that they'll have any emergency situation under control within three days.
And if you believe them . . . you can stop here.
You can buy enough freeze dried food from Mountain House and other such companies to feed your entire family for a year, or more. It's freeze dried in an near-instant, then popped into an airtight pouch and sealed in a metal container. If you have the storage space and the money, this is a good option. It'll save you a lot of work storing food in more old-fashioned and uncertain ways.
You can focus instead on providing fresh water and medical supplies, instead.
Some people buy their own food dehydrators. Most of these operate with electricity, but you can buy some that work just from being hung up in the sun. You can put meat, vegetable and fruit in them, and have hot air blow over the food so it's dried out and can be safely stored for a long time. Fruit dried this way makes great snacks. Having most of the moisture removed makes it taste that much sweeter.
Changes in temperature are the worst for food storage. That's why it's generally not a good idea to leave it in basements, attics or garages where it can go from too hot to too cold and back.
You must also keep it in containers that keep moisture out. That's another problem with using basements.
Light is also a problem. Keep food in closets and out of the way, if possible. If you use glass containers, use dark glass, or keep the jars in brown grocery bags.

My mom was a German emigre from the Frankfurt region of Germany. She came to the United States as a young woman and in quick order had two children and a broken marriage. My mom came from the time after Wwii when woman were still judged and prime by their homemaking skills. How is their cooking? Can they keep up the house? Will they be able to administrate the household budget? These old-fashioned ideas seem so outer space to most people of today. Circumstances forced my mom to work outside the home all throughout my childhood and young adulthood. She remarried a man that loved her home cooking and he deemed it necessary that we should all sit down to a home cooked meal as often as we could. My mom would get home from work and approximately immediately begin to whip up some marvelous dish. 

These food creating times always allowed us both to talk about our day and catch up with what was going on in the world. I am sure this is where my love for all manner of food and drink originated. One of my popular recipes was this economical, simple, and super moist method that I named Flaky Meat Loaf due to the corn flakes my mom always used. You can make this method for under easily. Most of the ingredients should already be in your refrigerator or pantry. Added bonuses from this method are the lean ground beef, low calorie count (240), vegetables, and loads of fiber from the corn flakes.  

Meat Loaf

  Flaky Meat Loaf   Makes 4 Servings   2 cups corn or bran flakes,   1/2 cup barbeque sauce,  2 egg whites,   3/4 lb. Extra lean ground beef,   1 medium yellow onion, chopped ,  1 medium ground pepper, chopped,   1/2 cup shredded carrots  

1. Preheat over to 375F. Mix cereal, 1/3 cup of the barbeque sauce and the egg whites in a large bowl until well blended. You have much more fun if you do it by hand!  

2. Shape into loaf. Place loaf on a broiler pan lined with aluminum foil. Brush the top & sides with the remaining barbeque sauce.  

3. Bake for 1 hour or until the loaf is cooked completely through.

Natural Ways to Keep Food Fresh Longer

If you are interested in health and diet, you have probably read all the research which points to the benefits of fresh, unprocessed foods. Eating healthier nearly always means opting for fresh fruits, whole grains and unprocessed meats and fish. Unfortunately, choosing foods without preservatives does have a down side - food spoils faster. That is no reason to go back to eating over-processed foods full of chemical preservatives, though. Long before our dependence on chemical preservatives, our mothers knew the secrets to keeping food fresh longer naturally. Here are some tips to help you keep fresh fruits, grains, vegetables, meat and fish fresh longer - the natural way.
General Tips
1. Keep your refrigerator at the right temperature. It should be kept between 38 and 40 F. to keep your foods as fresh as possible without freezing them.
2. Keep your eye on expiration dates when you shop.
3. Do not store highly perishable foods in the refrigerator or freezer door. They are more prone to temperature fluctuation.
4. Moisture promotes rotting and mold. Wipe vegetables and fruits dry before storing and avoid storing in plastic bags.
Fresh Fruits and Vegetables
Vegetables and fruits give off a gas called ethylene as they ripen. The ethylene sets off a chain reaction that causes the release of more ethylene, causing the food to ripen further. When fruits and vegetables are exposed to ethylene, they ripen faster. Some fruits and vegetables give off more ethylene than others - and some of them are more sensitive to ethylene than others.
1. Ethylene producers include apricots, avocados, bananas, cantaloupes, honeydew melons, kiwis, mangoes, nectarines, papayas, peaches, pears, plums, and tomatoes.
2. Fruits and vegetables that are sensitive to the effects of ethylene include: apples, broccoli, carrots, cucumbers, eggplants, green beans, lettuces and other greens, potatoes, summer squash, and watermelons.
3. To keep fresh fruits and vegetables fresh longer, do not store any of the former group n the same drawers as those in the latter group.
4. Store fruits and vegetables in the warmest part of your fridge to preserve flavor.
5. Remove produce from plastic bags before storing. The bags trap the ethylene close to the fruit so that it ripens faster.
6.Wash produce and then dry well before storing. Moisture speeds rotting.
Meats and Eggs
1. Keep fresh meats refrigerated between 38-40 F.
2. Keep meat in original wrapping in refrigerator if you will be using it within two days.
3. Wrap meat in foil or freezer paper before freezing.
4. Make sure that there is plenty of air circulation around meat products in your refrigerator.
5. Store eggs pointed side down.
6. Wrap smoked meats like ham or bacon in a vinegar-soaked cloth.
7. Cool cooked meats quickly and completely before placing them in refrigerator.
Bread and Cereal Products
1. Store fresh bread in a cool, dark, dry place like a cupboard or breadbox.
2. Close the waxed paper inner bag of breakfast cereals tightly to preserve freshness. Better yet, transfer the cereal into a zipper lock plastic bag and put it back in the box.
3. Freeze bread that will not be used within a week. If you freeze artisan breads pre-sliced, you can just take a slice when you need it.
4. Keep soft cookies soft by storing them in a cookie jar or airtight container with a slice of bread.
5. Cut slices from loaf cakes like banana bread and pound cake from the middle instead of the end. After slicing, push the two ends together to reform the 'loaf'. You don't leave a cut end to get stale that way.
6. To keep cake moist, store it with half an apple in the container.

Dairy Products and Cheese
1. Store milk in its original container.
2. Do not store milk in the door where temperature is warmer.
3. Put milk back in refrigerator immediately after using.
4. Wrap cheese in waxed paper or plastic, then store in deli drawer.
5. Do not store ice cream in the freezer door. Keep it in the main part of the freezer.
6. Place a sheet of plastic wrap or wax paper directly on the surface of the ice cream before storing. It will keep fresh longer.
Miscellaneous
1. Store coffee in an airtight, opaque container to preserver flavor and freshness.
2. Buy coffee in whole bean form and grind enough for one pot at a time.
3. If you buy more coffee than you can use in 3-4 days, store in an airtight container in the freezer/
4. Store avocadoes unbagged in the refrigerator.
5. Store bananas on the counter, unbagged.
6. Berries (blueberries, strawberries, raspberries) should be stored in their plastic container or a resealable plastic bag in the back of the refrigerator.
7. Wrap lettuce in damp paper towels and store in a plastic bag.

The Best Meat Loaf in the World

Every house has its own meat loaf formula and many of them start with a soup mix. however this house recipe, given to me years ago by my mother-in-law, is made-from-scratch meat loaf. I'm not talking about the mushy, difficulty meat loaf you may have eaten at restaurants. No, I'm talking about all beef meat loaf with ketchup and brown sugar topping.

Quality ingredients are what make this meat loaf so good. First of all, the formula calls for only one kind of meat - ground beef. The bread crumbs are fresh, not something from a can. The onion is also fresh, though I've used dehydrated in a pinch. As for the topping, it makes every mouthful of meat loaf extra delicious.

Meat Loaf

To make the meat loaf healthier I've changed a few of the ingredients. I use 90% or 93% lean ground beef, not the cheaper, fattier kind. Skim milk replaces whole milk. Instead of white bread crumbs I use whole wheat bread crumbs. Often I use no-calorie brown sugar instead of regular.

You can make this meat loaf in minutes. A house of four, along with two teens, will proably eat this meat loaf at one sitting. If you have any leftovers you can make meat loaf sandwiches or crumble the meat loaf into spaghetti sauce. Here's the recipe, a gift from my house to yours.

The Best Meat Loaf In The World

Ingredients: 3/4 cup fresh wheat bread crumbs; 3/4 cup skim milk; 1 1/2 pounds 90% or 93% lean ground beef; 2 large eggs, beaten; 1/4 cup grated onion; 1 teaspoon salt; 1/8 teaspoon frershly ground pepper; 1/2 teaspoon dried sage

Combine ingredients in a large mixing bowl with a fork. (Don't over-mix or the meat loaf will be tough.) Turn meat aggregate into a meat loaf pan. plane the meat loaf with the tines of the fork. put in order topping with 1/4 cup ketchup, 3 tablespoons brown sugar (or no-calorie brown sugar), 1 teaspoon dry mustard, and 1/4 teaspoon nutmeg. Spread topping over meat loaf. Bake in 350 degree oven for 1 hour. Let meat loaf cool for 10 minutes before slicing. Makes 8-10 servings.

One of my popular meals growing up was a hearty supper of meat loaf. Although this great American dish has kind of gone out of fashion, I think we should give meat loaf another chance.

The 1950's was the heyday of meat loaf, but I would like to give you three new and improved meat loaf recipes to add to your contemporary meals for your family:

Meat Loaf

·         Broccoli and Cheese Meat Loaf

·         7-Up Meat Loaf

·         Basic Turkey Meat Loaf

Broccoli and Cheese Meat Loaf Recipe

Broccoli and Cheese, it's a good as its sounds! You need all your quarterly ingredients for meat loaf: 2 eggs, pound and a half of ground beef, half a cup of bread crumbs (Italian style), and half a cut of ketchup. Also contain one cup of icy broccoli and size slices of American cheese to your ingredients list. Preheat your oven to 350 degrees. Take a mixing bowl and beat two eggs until smooth. Add the beef, bread crumbs, onion, and ketchup. This is the main dish. To add the great broccoli and cheese twist, make an indentation down the middle of the meat loaf, and place the broccoli inside, covered by three slices of cheese. Then cover this composition with the left over beef mixture. Bake for about one hour then cover the top with cheese, and serve!

7-Up Meat Loaf Recipe

To make this bright dish, the key is in your bread crumbs. Make your popular type, making sure to brush it with Worcestershire sauce. Before cooking, however, you need to soak your bread crumbs in 7-Up. This will give your dish a sweeter taste, but also have a little kick from the carbonation. You probably don't believe me, but this is a great recipe, and you can only know how it turns out if you try it yourself!

Basic Turkey Meat Loaf

If beef is a little too heavy for you, and you want to try the turkey dish, this is a great formula to start on. You need two pounds of turkey, an onion, garlic, an egg, ketchup, bread crumbs, Worcestershire sauce, parsley, and paprika.  What is great about this meal is that when it is cold, it is a great sandwich meat for a week afterward.

Car Crash Songs

As long as there has been human life on Planet Earth there has been music. Since all cultures in the world have some form of music social scientists have concluded that the first music was created in Africa, where they believe the human race originated, and spread throughout the world as various groups migrated. Music is always influenced by the events that take place within a cultural group and the groups' reaction to those events. The emotions and philosophies expressed in music and the manner in which musicians convey them will change from one era to another and from one locale to another. The musicians of the early 20th century in America sang about cars and the changes this invention brought to society. When wars happen, musicians sing about wars. If tragedy strikes, that tragedy finds its way into music. And throughout history there have been tragedies that have caused disillusionment among the young. This disillusionment would find an outlet in music and some social revolt on the part of youth. One example is the Roaring 20's. Young men returned from war, having learned through bitter experience, the difference between the idealistic glory expressed in 'Over There' and the gore of Flanders Field. And thus began the social revolution of the Flapper Age.

Again in the 1960's, youth were torn apart by the Vietnam conflict. So a tragedy culture evolved. At the same time automobile accidents were on the increase and many of the youth's heroes, such as Jimmy Dean died in these accidents. Consequently a flurry of songs about car crashes became a popular theme both in pop and rock music as well as country western. Some of these were eulogies. For example, in 1964 The Beach Boys recorded "A Young Man is Gone" in memory of James Dean who had been killed in a car accident. Much later, in 1994, Suede recorded "Daddy's Speeding", another eulogy to Dean. Then in 1998, Jill Johnson did "Karleken ar" in response to Princess Diana's death in a car accident in Paris. "Objects In The Rear View Mirror May Appear Closer Than They Are" (Meat Loaf) came about because the singer was devastated over the death of a close, personal friend. "Glass In The Trees" by Dead Poetic is another song about a friend who was killed in a car accident.

Young people are always drawn to love themes and car crash songs are no exception. Ray Peterson's "Tell Laura I Love Her" is the love story of Laura and Tommy. Tommy needs $1,000 to buy Laura an engagement ring so he enters a stock car race hoping to win the money. Instead, he is killed.

Another song, "Teen Angel" tells of a teen couple whose car is stalled on the railroad tracks. The boy runs back to the car for his school ring and is struck down by an oncoming train. Country western joins the crash genre with Phantom 309, by Red Sovine. A hitchhiker meets the ghost of a truck driver who died when he drove his semi into a ditch to avoid a collision with a bus carrying teenagers.

And some of the car crash songs relate to safety education. One example is "Airbag" by Radiohead wherein the lyrics state, "an airbag saved my life."

Aromatic Beef Curry

A beef stew of a different kind is the following aromatic curry.

Meat Loaf

Ingredients

25ml each butter and oil

2 large onions, sliced

2 tart apples, peeled and diced

15ml curry powder

2 cloves garlic, crushed

5ml each turmeric, ground cinnamon and cumin

750g boneless beef chuck, cubed

7ml salt

50ml mild chutney

25ml brown vinegar

15ml brown sugar

200ml tomato puree

250ml water

2 bay leaves

125ml coconut

100ml sultanas

Cream (optional)

Method

Heat butter and oil and fry onions and apples. Add curry powder, garlic, spices and beef. When browned, turn off the heat and stir in remaining ingredients, except sultanas. Spoon into a large baking dish and bake, covered, at 160ºC for 1 hour 30 minutes. Add more water and stock if necessary, and the sultanas. Cover and bake for 30 minutes longer or until very tender. If using, swirl in cream just before serving.

Frosted Meat Loaf

It's difficult to give a meat loaf airs, but the potato 'frosting' and a homemade gravy add to the appearance and flavour of this one.

Ingredients

125ml milk

1 egg

125ml quick-cooking oats

25ml oil

2 onions, chopped

500g minced beef

15ml Worcester sauce

25ml tomato sauce

50ml chopped parsley

1 medium-sized carrot, coarsely grated

5ml salt

5ml mixed dried herbs

Frosting

6 medium potatoes, boiled and mashed

±100ml hot milk

25ml butter

1 egg yolk

Salt and pepper

Method

Beat milk with egg, add oats and leave to soak for 10 minutes. Heat oil and fry onions until lightly browned. Mix remaining ingredients, then add fried onion and milk mixture. Consolidate fully and pack firmly into an oiled 25 x 8 x 7cm loaf tin. Bake at 180ºC for 1 hour. Stand for about 10 minutes or until juices are re-absorbed, then unmould onto flat, warmed serving dish.
Beat mashed potato with hot milk, butter and egg yolk until fluffy and creamy. Seasno, then swirl over the entire loaf, top and sides, and return to the oven at the same temperature for 15-20 minutes. Serve with a green vegetable and pumpkin baked in the oven at the same time. Serves 6.

The Perfect Sandwich

Everybody enjoys eating different types of food, it's a fact. But who doesn't enjoy a really good sandwich? I don't know anyone who turns their nose up at a really well constructed and flavoured 'sarnie'.
I suppose the point is that each person has their favorite, and each nation has their most famous. For example, I love a homemade lightly toasted multigrain slice filled with mayonnaise, tomato, cucumber, spinach and smoked peppered mackerel. But my mother prefers a simple shop-bought prawn mayonnaise on oatmeal bread. In the UK, we prefer to have our sandwiches on slices of freshly baked bread, rather than in rustic baguettes like the French or in a grilled Panini like the Italians.
Of course, it all begins with the main ingredient: Alaskan salmon. There are different ways to get it, but if you really want to treat yourself and your family, use only fresh salmon. Dab each side of your filets with olive oil and commence grilling. Prep some green onions so you will be ready to grill them about 2 minutes before the salmon is finished. A fresh piece of salmon should only take about 4 or 5 minutes on each side. Once you have fish set on the grill, drop the green onions.
Chicken salad is a popular dish on its own but there is no good reason to not put it between two slices of white or whole-wheat breads. Most common variation features chicken leftover bits, boiled or cooked chicken breast fillets.
A greasy sauce is used to keep the creation together, usually a mixture of mayonnaise and grease. Chicken breasts are light meat on their own, but combined with the greasy sauce it would be too heavy for a balanced sandwich, some bitter lettuce is advised.
Still others put on a little stuffing, gravy and use a whole wheat type bread - Sure this works fine too, a mini-taste of the Thanksgiving Supper between two slices of bread. Many people who customize their Turkey Sandwiches tell us that, they get almost as much joy in anticipation and making it, as they do eating it. Myself, perhaps like you really just like to eat the Turkey Sandwiches the best.
Today I want to go back to basics. I want to make a simple white sandwich bread that has enough structure to hold the filling without falling apart. A bread with a fairly soft crust but also not too absorbent so that it doesn't become a soggy mess when loaded up with all the goodies. This type of bread is typical of a North American bread, having some fat, sugar and enriching agent that makes for the perfect sandwich loaf. I am not talking about Wonder Bread, here, BTW. I mean, it's a wonder that it is still called bread. I mean, really! I am looking for a loaf that will hold the goods and stay edible for a few days. Forget that it will disappear probably the same day. It should have 'shelf life' of a few days at least.
Saute onions in butter until soft. Add mushrooms and saute another two minutes. Add nutmeg and garlic. Sprinkle flour over mixture and gradually stir in half and half. Cook sauce over medium heat until thick. Chill. Cut crusts from bread. Spread mushroom mixture over bread and roll. Lay sandwiches in a shallow pan. Brush the tops with melted butter. Bake in a 375-400 degree oven until hot and slightly brown. Serve immediately. Makes 6-8 sandwiches.

Make your house this old-fashion meal of Ida Mae's Meatloaf and Sweet and Sour Cabbage. Sit down to an old fashion meal that is comforting, tasty, and inexpensive. Serve with a multi-grain bread and your popular dessert. If you have leftover meatloaf, make meatloaf sandwiches the next day. This is a great method for stretching your food dollars in these tough economic times.

Ida Mae'S Meat Loaf
This method is from old church suppers in Southern Indiana.

Meat Loaf

2 lb ground beef steak
2 eggs
1 1/2 cup bread crumbs
3/4 cup ketchup
1/2 cup warm water
1 pkg dry onion soup mix
1 can (8-oz) tomato sauce

Preheat oven to 350 degrees.

Using your hands, couple the beef and eggs in a large mixing bowl. Add the bread crumbs, and ketchup; combine. Pour the warm water into the dry soup mix and stir to blend. Add the soup blend to the other ingredients. Mix together well. Put the blend into a loaf pan. Top the meatloaf with 2 strips of bacon. Pour the tomato sauce overall. Bake for 1 hour at 350 degrees.

Sweet And Sour Cabbage

2 lbs red cabbage
1/4 lb margarine
1/2 cup chopped onion
1/2 cup red wine vinegar
4 tbsp brown sugar
1 tsp salt
1/2 tsp pepper

Shred cabbage and soak in very cold water for 30 minutes; drain. Place drained cabbage in a large saucepan and add vinegar, onion, salt and pepper. Cover the pan and bring cabbage to a boil. Lower the heat and simmer until the cabbage is just tender, stirring often. Add the margarine and sugar, stirring well to melt.

Most families serve traditional food that pertains to their legacy during holidays. I am Scandinavian so we serve Scandinavian fare. Scandinavians are known for their smorgasbords and that is what I remember most as a child. Christmas traditions, to start with children in mind, is ialways the best fancy for development a fine meal that they will remember and carry on through generations. Presulta is a recipe for meat loaf in a way and I share it here below with you.

Christmas recipes and traditions for Germans have similar meals so this recipe could be thought about for them as well I think.

Meat Loaf

I normally serve smorgasbords on Christmas eve, holding it light for digestion and the following day. My Mother-in-Law serves a overwhelming Scandinavian evening meal on Christmas day. One of the thngs she prides herself in is "Presulta", a meat mixture, kind of a recipe for meat loaf. It is put into a wooden form and served with vinegar. Yup, It's true, vinegar.

The recipe for this meat loaf called Presulta has veal in it. Ahh me, I must confess that bothers me a lot! I have boycotted veal for forever. I just don't like the way they raise those small calves, ya know? I confess though that on Christmas day I do not refuse this holiday fare for which my Mother-in-Law works so hard to prepare. Can it be make without the veal and supplanted it with quarterly beef? I don't know. I think it is worth a try and maybe someday I will.

"Presulta"

2 pounds Pork butt
2 pounds Veal Shank
2 pounds Veal

Seasonings:

1/2 Tbls. Peppercorns
3 large bay leaves
1/2 Tbls. Allspice
4 tsp. Salt

Boil meat together in a large pot with the seasonings. Water should be sufficient to cover the meat. Bring to a boil and simmer for two hours or until tender. Let cool in liquid. Cut into one by one inch pieces. Leave some fat on the pork but not the veal. Line loaf pans with muslin which is large sufficient to completely cover top of meat once folded over. Divide meat and juice into the pans, (there should be sufficient juice to just cover the meat) cover the top with the muslin. Place heavy weight on top to press and covenant this recipe for meat loaf called, Presulta.

This should be made several days before serving.

Serve cold. Cut into slices and serve with a dish of white vinegar to sprinkle over the top. It is the vinegar that makes the true difference.

Blend flour and water; add gradually to meat mixture and blend well. Let boil 2  minutes. Serve in platter surrounded with fried cornmeal mush. Garnish with parsley. Serves 6.
Fried Cornmeal Mush
3 cups hot water
1 cup corn meal
3/2 teaspoons salt
1 cup cold water
1/2 cup vegetable shortening
Heat water to boiling in top of double boiler over direct heat. Mix cornmeal and salt. Add cold water and blend. Add corn meal mixture to boiling water gradually, stirring constantly. Continue cooking and stirring until mixture is slightly thickened (about5minutes). Place over boiling water, cover, and cook 30 minutes longer, stirring occasionally. Pour into loaf pan, about 9x5x3-inches, and chill until firm. Remove from pan, cut into 1/2-inch slices, dip in flour, and fry in hot fat until golden brown on both sides.
Hot Tamale Pie
1/2 cup cornmeal
3/2 cups water
1/2 teaspoon salt
3/2 cups irradiated evaporated milk
1 small onion
1 tablespoon fat
2 cups left-over beef cut fine
3/2 cups canned tomato
1/2 teaspoon salt
Pepper
Measure meal into heavy saucepan. Add water and V2 teaspoon salt. Boil until mixture begins to thicken, then add milk and continue boiling 8 to 10 minutes, stirring constantly. Chop onion and cook slowly in fat until yellow. Add meat, tomatoes and Va teaspoon salt and pepper to taste. Turn filling into baking dish that has been greased and lined with 1/2 of the mush. Cover with remainder of mush, and bake in moderate oven (375 degrees F.) 45 minutes. Serves 6.

As a busy mom and grandmother, I don't have a lot of time to spend in my kitchen preparation dinner every night. What I like about these 3 pork chop recipes is that they are easy to get ready and made with ingredients you most likely have on hand.

All of these recipes take less than 60 minutes from preparation to serving time. You can make the recipe the day before and refrigerate it for the following day. Just reheat in your microwave for 4 to 5 minutes and dinner is on the table in a flash.

Meat Loaf

Spicy Chops

6 pork chops

1 can condensed Italian style tomato soup

1 tablespoon tap water

1 tablespoon white vinegar

1 tablespoon Worcestershire sauce

1 tablespoon brown sugar

1/2 teaspoon hot pepper sauce

Preheat oven to 400 degrees. In a large baking dish, arrange meat. Bake in preheated oven for 20 minutes. While meat is baking, merge the following ingredients in a small bowl: tomato soup, water, vinegar, Worcestershire sauce, brown sugar and pepper sauce. Spoon soup compound over meat. Bake for an additional 20 to 30 minutes or until done.

Mushroom Pork Chops

1 tablespoon vegetable oil

6 pork chops

1 can condensed cream of mushroom soup

1/4 cup water

salt and pepper to taste

small amount of vegetable oil

In a large frying pan over medium heat, in hot vegetable oil, cook half of the chops for 10 minutes or until browned on both sides. Remove them from the heat and set aside. Repeat with remaining meat. In the same frying pan, merge mushroom soup and water. Heat to a boiling and return chops to the frying pan. Cover pan and sell out heat to low, simmer for an additional 15 to 20 minutes or until the meat is done.

Stroganoff Pork Chops

1/3 cup all-purpose flour

1/2 teaspoon seasoned salt

6 pork chops

1/2 teaspoon paprika

1 envelope brown gravy mix

1 small onion, sliced

4 oz. Can mushrooms, drained

1/2 cup sour cream

In a small bowl, merge the flour, seasoned salt, and paprika. Use this compound to coat your meat. Brown meat in a lightly greased skillet and drain. merge gravy mix and water as called for on the package of gravy. Pour over meat and stir in the sliced onions. Cover the pan and simmer for 30 minutes. Uncover and simmer for 15 more minutes. Remove pork chops to serving platter. Add mushrooms and sour cream to the gravy compound and heat over low heat for 3 minutes. Once compound is heated, pour over the pork chops.

Preheat the oven to 400 degrees. Line a 9x5-inch loaf pan with aluminum foil and cooking spray.

In a large bowl, integrate the ground beef, 1/2 cup of ketchup, the tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion and 2 teaspoons of mustard. Mix all of this together with a large spoon or your hands. Place the meatloaf mixture into the pan and press down until set.

In a small bowl, integrate 1/2 cup of the ketchup, 1 teaspoon of mustard and the brown sugar. Mix together until nice and smooth. Spread this glaze mixture on the top of the meatloaf.

Bake loaf for 1 hour, or until it is firm and lightly brown in color. Drain the fat off and let it stand for about 5 to 10 minutes before serving.

I have been cooking turkey for nigh on 20 years and how long do you cook turkey breast is one of the most often asked questions. For such a beloved meat turkey is seldom cooked right by the masses. Usually population overcook turkey breast and it turns out dry and hard, fit only for the house pet.

The best way to have a moist turkey and to ensure it is properly cooked is to use a thermometer. Once the internal climatic characteristic is 170 Fahrenheit the turkey breast will be ready to eat and moist. If you don't possess a thermometer then the 20-30 minutes rule still applies.

Use a shallow roasting pan if you can, they allow the turkey to cook more evenly. I like to add herbs, water, a quartered onion, celery and carrots to the pan to stop it drying and to generate a flavoursome base for a gravy.

If the breast is stuffed then the cooking time is 30-40 minutes per pound.

An Alternative to Pan Cooking.

I like to slow cook most of my meats to ensure the herbs and spices I use have time to work their way into the meat. Slow cooking means using a very low heat and cooking for several hours. The turkey breast is moist and juicy every time.

Rub seasoning under the skin of the meat (garlic salt, sage, thyme and all purpose seasoning) and put in a slow cooker with chopped carrots, celery, a whole onion (peeled) and a can of cream of chicken soup (good quality).

Leave for 6-8 hours or until internal climatic characteristic is 195. Turn off, take off turkey and leave for 10-15 minutes before carving and serving with the sauce (discard veggies) and mashed potatoes and steamed broccoli.

The perfect turkey breast should have juicy white meat, meaning it is firm yet moist. When it hits your mouth it should have an roughly spongy juiciness. If you overcook it you will know. It will taste like you're trying to chew week-old gum!

More then likely the Greek version used Lamb as its meat of option and judging from my grandfather who was from Greece there was likely mint added to its list of ingredients. Spices of singular note were cinnamon and cloves which are oftentimes employed to flavor much of Greek foods.

Meat Loaf

The Greek name for this singular stew is translated as stifatho. It is braised beef or possibly lamb with onions which is normally ready differently according to the house who is cooking it. Every house has their own versions of this stew with each slightly different. This method would be thought about typical of the Greek cooking so tasteless in and colse to the city of Athens.

Ingredients

2 pounds of lean beef or lamb stewing meat
3 tablespoons of olive oil
2 Cups of water
1 can of tomato paste
3 tablespoons of Red wine vinegar
2 ½ teaspoons of Salt
½ teaspoon of Sugar
½ teaspoon of Ground pepper
½ teaspoon of Minced garlic
1 stick of cinnamon about 4 inches long or substitute ½ teaspoon of ground cinnamon
7 whole cloves or ¼ teaspoon of ground cloves
2 pounds of small white pearl onions

Start by trimming all the excess fat from colse to the meat and then slice it into 1 inch chunk pieces. Pre-heat the olive oil in a large stock pot over a medium to high heat. Add the chunks of meat to the olive oil and brown the slices on all sides.

In an additional one medium saucepan join and whisk together the water, the can of tomato paste, salt, pepper, vinegar, sugar and garlic bringing the mixture to a rapid boil and pour immediately over the beef or lamb that is in the stock pot. Now, add the cinnamon stick or the ground cinnamon to the pot.

During this next step add the whole cloves into one of the small onions and place them into the mixture or if using ground cloves add it now. Cover the stock pot and simmer the mixture for 1 and a half hours.

Peel the remaining onions at this time and add them to the stew pot. Continue to cook for an additional one 45 minutes until the onions and the beef come to be tender. Prior to serving take off the cinnamon stick as well as the clove stuffed onion. Serve your stew over rice or pasta complimented with a rustic crusty type bread. Rotisserie Grill - Leg of Lamb

Fire-roasted leg of lamb is pure luxury in the world of quality dining. Your guests will never know how easy it was to prepare, and you will be thought about an outdoor chef extraordinaire.

Ingredients:

Meat Loaf

3 Tbsp crumbled dried rosemary
3 Tbsp crumbled dried basil
3 Tbsp crumbled dried marjoram
2 Tbsp Sea Salt
1 Tbsp dried parsley

1 5 to 5 1/2 Pound boned and tied Leg of Lamb
3 Tbsp extra virgin olive oil
3 cloves garlic, thinly sliced

Fresh lavender sprigs

Directions:

At least 7 hour prior to cooking (or up to 24 hours ahead) combine the dry ingredients in a medium bowl, manufacture sure they are well crumbled whether by stirring or a quick tumble in the blender.

Place the leg of lamb over a large Ziploc bag and rub it all over with olive oil. Spread the dry rub combination over the lamb, manufacture sure all crevices are covered. Place garlic in and colse to the lamb. Seal lamb in bag and place in refrigerator until 1 hour prior to placing on spit.

One hour prior to cooking, take off from refrigerator, and let sit uncovered at room temperature.

Remove spit, from rotisserie and pre heat grill for 10 minutes with lid closed.

Slide one of the prongs onto the far end of the spit and slide on the lamb. Center the lamb, manufacture sure the prongs are well into the meat. Accumulate the first prong and slide on the second prong, Accumulate the meat and then Accumulate the prong.

Reposition the lamb in the Center of the spit and Accumulate counterweight if available. Place shallow drip pan under the lamb to catch drippings.

Close the lid of the grill (unless grill manufacturer's instructions state otherwise). Approximate cooking time is 45 to 60 minutes. The internal climatic characteristic should be 112 degrees F for rare to about 128 degrees F to very well cooked but still juicy. Completed cooking should be based on degrees and not time as each grill is a limited different. The meat is done when the climatic characteristic reaches the required degrees and not based on the clock.

Using heat proof mittens, take off the spit from the grill. Unscrew and slide off the lamb. Tent the meat with foil for about 10 minutes to let juices settle. Cut of the string keeping the lamb. Thinly slice, over the muscle grain, changing directions as the grain changes.

Garnish with fresh lavender. Serve and Enjoy!
