- 1 lb of minced chicken breast (get this from the butcher, it's far too much effort to do it yourself)
- 7 oz of minced beef
- 1 egg
- 1 can of truffles
- 1 small can of pate
- 1 glass of cognac
- Ham
- Salt, pepper and butter

Preparation:

Mix together the various minced meats. Next, add in the egg, truffles, pate, and a dash of cognac (seriously, just a dash, this isn't supposed to be an alcoholic dish and there's a million more things we can make later that DO taste better with lots of cognac in them), as well as a little salt, pepper, and butter (not too much). Mix with your hands again, but don't worry about things being a little lumpy - texture is good in a meat loaf.

You'll need a cake mould again, and make sure you butter it before using it as this will really stick to the sides if you don't. Place a slice or two of ham at the bottom, then throw the rest of the mix in, finishing the top layer with another slice of ham.

Bung it into the oven and bake for 40 minutes at 360F.

Combining ground ham and lean ground pork into a ham loaf makes a very tasty treat. One of my late aunts used to make delicious ham loaf and this recipe is pretty close to what she made. She was a delightful aunt who could turn any kind of leftovers into a delicious meal and this is how her ham loaf came to be. This recipe has a sweet and sour sauce that only adds to the delicious flavor of this loaf. The recipe calls for 1/2 cup of Splenda brown sugar blend which makes it suitable for diabetics. If you don't need to watch your sugar intake, you can use 1 cup of brown sugar instead. This is an updated version of an old, old recipe. This recipe is very suitable for diabetics, too.

FARMER'S HAM LOAF

Meat Loaf

2 lbs ground ham

2 lbs ground lean pork

1 cup fine dry bread crumbs

2 eggs

1 cup milk

Preheat oven to 350 degrees.

In a large bowl combine the ground ham, ground pork, and the bread crumbs. In a small bowl, beat the eggs and stir in the milk. Add the milk, egg mixture to the meat blend. Mix together well and form into a loaf. Place loaf in a pan.

Sauce:

1/2 cup Splenda brown sugar blend

1 tbsp prepared mustard

1/2 cup cider vinegar

1/2 cup water

Place all the sauce ingredients into a small saucepan and bring to a boil over medium heat, stirring to blend and melt the Splenda blend. Pour the sauce over the ham loaf. Bake in a 350 degree oven for 1 1/2 to 2 hours, basting with the sauce frequently.

Meatloaf has a bad reputation for being a boring centerpiece to an excruciatingly dull meal. This is at least in part because cooks did not think outside the box. In fact, most cooks were probably so grateful to find a good meatloaf recipe that they just prepared it exactly the same, every time.

Not this time. This meatloaf is like every happy taste you may have ever experienced in each wonderful bite. The recipe is for a huge holiday get-together, not an evening at home with the family. This is a whole lot of food.

Tastiest Grilled Meatloaf Ever

What You Need:

3-4 sausages in casing 1/4 pound bacon 8 oz sliced mushrooms 1 red bell pepper, sliced 1 green bell pepper, sliced 1/2 Vidalia onion, sliced 5 pounds fresh ground hamburger seasoning to taste (salt, pepper, garlic) 1 1/2 cups BBQ sauce (or ketchup, or salsa) 8 oz shredded cheese

Optional:

Pepperoni Jalapenos Pineapple rings Anything you would find appealing or interesting

How To Make It:

Get your coals started, and down to an even heat of 325°. Preheat your cast iron skillet over the coals. When it is ready, remove the sausage from the casing, and add it, along with the bacon, to the skillet.

When the meat is no longer pink, add the mushrooms, peppers, and onion. Stir fry until they are no longer crisp. Remove the skillet from the heat and set aside. By now, your heat is probably dropping to 300° or so, and that is fine. You just do not want it to go any lower than 250°.

Use a high-sided cookie sheet for the ground beef. Season it, and then shape it into a loaf that covers the cookie sheet, leaving roughly 1/2 to 1" on all sides. The meat will probably be 1 to 1 1/2" high.

Cover the meat with your favorite sauce, then the cheese. Finally, add the optional toppings.

Remove the rack, and push the coals to one side. Add some hard wood, fruit is a good choice.

Replace the rack, and place the meatloaf on the side opposite the coals. Cover the grill, and let cook for 20-25 minutes.

Remove the lid, and use a turkey baster to remove excess fat. Turn the pan 180°, and cook for another 20-25 minutes.

Let the dish sit for ten minutes before cutting and serving. Recommended serving size is 3" squares. You can serve it as meatloaf, or on a hamburger bun.

Meat should be cooked according to the cut. The more expensive cuts of tender meat require very little cooking and can be fried, grilled or broiled to develop a rich flavor. Slow cooking in water softens the fibers and dissolves the connective tissues, making the meat tender. Tough meat should be cooked by simmering, stewing, steaming or pressure cooking. All meats can be tenderized to a certain extent by any of the following methods:-

1. Wrap the meat up in crushed papaya leaves. The juice from the papaya leaves contains an enzyme that will tenderize meats.
2. Chop or mince the meat to break up the fibers, thus tenderizing the meat.
3. Pound or beat the meat with a rolling pin to break up the connective tissues.
4. Cut or slice meat across the grain to shorten the fibers.

Meat Loaf

Heat coagulates protein, so if meat is cooked at a high temperature for a long time, the meat becomes tough and difficult to digest. Meat should be cooked at a high temperature for a few minutes to coagulate the outer surface and seal in the meat juices, then the heat should be reduced to cook the inside of the meat slowly. Cold water draws out the juice from the meat. Soups are tastier if the meat is cut into small pieces and soaked in cold water which is then slowly brought to the boil. The meat in stews is juicier and tasty if it is fried to cook the outside first and then stewed slowly in water until the meat is tender, a process which takes from 1½ to 2 hours.

Care of meat in the home:-

1. Unwrap the meat and remove the wrapper as soon as possible because the wrapping paper absorbs the meat juice and sometimes spoils the flavor of the meat.
2. Keep the meat in the refrigerator.
3. If no refrigerator is available, cook the meat as soon as possible.
4. If meat is to be kept in a refrigerator for more than a few hours, it should be wrapped up in a polythene bag or in greaseproof paper and kept in the freezer of the refrigerator.
5. Wash the whole piece of meat before cutting it up to prevent the unnecessary loss of meat juices and flavor.

Ingredients:-
150 gram meat
1 potato
1 carrot
3-4 onions (size of big marbles)
2 cloves
a small piece nutmeg
1 teaspoon flour
oil, salt, pepper and sauce

Method:-
1. Wash and cut the meat into rectangular piece of ½" thickness.
2. Season the meat with salt, sauce and pepper.
3. Heat up 2 tablespoonfuls of oil in a saucepan and fry the meat till it is slightly brown.
4. Add 1 pint of water, the cloves and nutmeg and allow the meat to simmer for 1 to 1½ hours.
5. Peel and cut the potato and carrot into cubes. Peel onions.
6. When the meat is tender, add potato, carrot, onions and cook to stew for another 20 to 25 minutes.
7. Blend the flour with a little water and add it to the stew to thicken the gravy.
8. Season well and serve.

Meat Curry

Ingredients:-
150 gram meat
½ coconut
1 potato
6-8 onions
1 sprig curry leaves
1 small piece ginger
1 tablespoon curry powder
oil and salt

Method:-
1. Wash and cut the meat, shred ginger, slice onions, peel and cut up potato.
2. Prepare ¼ pint first sultanas and 1 pint second sultanas.
3. Heat up 3 tablespoonfuls of oil and slightly brown onions and ginger.
4. Fry the curry powder and curry leaves in the oil for 2 minutes.
5. Add the meat and fry for 4 to 5 minutes.
6. Add salt and second sultanas, cover and simmer for 1 to 1½ hours till the meat is tender.
7. Add the potatoes and continue cooking until the potatoes are cooked.
8. Add the first sultanas and as soon as the curry boil again, remove it from the fire.
9. Season to taste and serve.

Beef Soup
Ingredients:-
150 gram (flank) meat
1 stalk celery
1 onion
1 sprig spring onions
4 pepper corns
1 clove
1 star anise
salt and pepper

Method:-
1. Wash and cut the beef into ½" cubes.
2. Put meat, celery stem, pepper corns, star anise and clove into saucepan with 2 pints of water and put it to boil.
3. When the soup boils, lower the fire and let the soup simmer for 1 to 1½ hours.
4. Dice spring onions, shred the celery leaves and slice onion.
5. Heat up a little oil and brown the onions for garnishing.
6. When soup is ready, season it well and serve it garnished with browned onions, spring onions and celery.

I am a ground meat lover. I love hamburgers, meatloaves and more. I do rotate between ground beef and ground turkey when I cook as my daughter prefers the poultry over the beef.

While I love to cook, I also like to prepare dinner in under an hour, eat and then have the rest of the evening to do the things I want to do.

Meat Loaf

I'd like to share three ground meat recipes with you, all that my family loves.

I remember having meatloaf as a child. It was one of my least favorite meals. Then about a year ago, my dad was in the hospital and the cafeteria served a turkey meatloaf. It was excellent. I knew I wanted to try and make this at home. What I ended up with was a Parmesan meatloaf that we loved. I do use ground turkey to make this, so it does come out very soft. Here is the ingredient list:

1/2 cup spaghetti sauce
1 pound ground turkey
1/2 cup bread crumbs
1/2 cup Parmesan cheese
1/4 cup chopped onion
1 egg, beaten

Set aside 1/4 cup sauce and 1/4 cup cheese. Mix remaining ingredients together and form into loaf. Place into loaf pan and cover with remaining sauce and cheese. Bake at 375 degrees for 45 minutes.

I make this in just 10 minutes, then bake it for the 45 minutes. This dish is ready in under one hour.

We make our own quick and easy sloppy joes. My kids like ground beef mixed with barbeque sauce and served on a roll. I crumble the meat into a skillet and slow cook the beef. After draining the beef I add the barbeque sauce and simmer for ten minutes. When I make this for myself, I chop up some onion and garlic and saute that right in. We toast the buns, serve with a salad and this is a very quick and easy meal.

I happen to love Mexican food. We make a taco casserole that is very quick to prepare and quite tasty. Here's a list of the ingredients needed:

1 pound ground meat
1 cup Monterey jack cheese, shredded
1 cup Colby cheese, shredded
2 cups crushed tortilla chips
1 cup prepared salsa
1/2 cup mayonnaise
2 teaspoon chili powder
1 tomato, chopped
1 small can sliced black olives
2 cups shredded lettuce
1/2 avocado, sliced

Brown and drain ground meat. Add in the mayo, salsa, and chili powder. Mix well. Pour half the meat into a casserole dish. Place one cup of the chips on top and half of the two cheeses. Repeat these layers and bake for 20 minutes at 350 degrees. Cut into portions. Once on plate, add lettuce, tomato, olives and avocado on top.

We buy the multi packs of ground turkey at Costco. I'm a happy camper to have at least a few meals a week with ground beef/turkey.

Making Braised Beef, Pot Roast Beef, Or Beef Loaf

BRAIZED BEEF.--An excellent way in which to cook a piece of beef that is cut from the rump or lower round is to braize it. This method consists in placing the meat on a rack over a small quantity of water in a closed pan and then baking it in the oven for about 4 hours. Vegetables cut into small pieces are placed in the water and they cook while the meat is baking. As meat prepared in this way really cooks in the flavored steam that rises from the vegetables, it becomes very tender and has a splendid flavor; also, the gravy that may be made from the liquid that remains adds to its value. In serving it, a spoonful of the vegetables is generally put on the plate with each piece of meat.
BRAIZED BEEF (Sufficient to Serve Six)
3 lb. beef from rump or lower round Flour Salt Pepper 2 thin slices salt pork 1/4 c. diced carrots 1/4 c. diced turnips 1/4 c. diced onions 1/4 c. diced celery 3 c. boiling water
Wipe the meat with a damp cloth, and dredge, or sprinkle, it with the flour, salt, and pepper. Try out the pork and brown the entire surface of the meat in the fat thus obtained. Then place the meat on a rack in a deep granite pan, an earthen bowl, or a baking dish, and surround it with the diced vegetables. Add the boiling water, cover the dish tight, and place in a slow oven. Bake for about 4 hours at a low temperature. Then remove the meat to a hot platter, strain out the vegetables, and make a thickened gravy of the liquid that remains, as explained later.
POT-ROASTED BEEF.--The usual, and probably the most satisfactory, method of preparing the cheaper cuts of beef is to cook them in a heavy iron pot over a slow fire for several hours. If the proper attention is given to the preparation of such a roast, usually called a pot roast, it will prove a very appetizing dish. Potatoes may also be cooked in the pot with the meat. This is a good plan to follow for it saves fuel and at the same time offers variety in the cooking of potatoes.
When a piece of beef is to be roasted in a pot, try out in the pot a little of the beef fat. Then wipe the meat carefully and brown it on all sides in the fat. Add salt, pepper, and 1/2 cupful of boiling water and cover the pot tightly. Cook over a slow fire until the water is evaporated and the meat begins to brown; then add another 1/2 cupful of water. Continue to do this until the meat has cooked for several hours, or until the entire surface is well browned and the meat tissue very tender. Then place the meat on a hot platter and, if desired, make gravy of the fat that remains in the pan, following the directions given later. If potatoes are to be cooked with the roast, put them into the pot around the meat about 45 minutes before the meat is to be removed, as they will be cooked sufficiently when the roast is done.
BEEF LOAF.--Hamburger steak is not always made into small patties and broiled or sauted. In fact, it is very often combined with cracker crumbs, milk, and egg, and then well seasoned to make a beef loaf. Since there are no bones nor fat to be cut away in serving, this is an economical dish and should be used occasionally to give variety to the diet. If desired, a small quantity of salt pork may be combined with the beef to add flavor.
BEEF LOAF (Sufficient to Serve Ten)
3 lb. beef 2 Tb. salt 1/4 lb. salt pork 1/4 Tb. pepper 1 c. cracker crumbs 1 small onion 1 c. milk 2 Tb. chopped parsley 1 egg
Put the beef and pork through the food chopper; then mix thoroughly with the other ingredients. Pack tightly into a loaf-cake pan. Bake in a moderate oven for 2 1/2 to 3 hours. During the baking, baste frequently with hot water to which a little butter has been added. Serve either hot or cold, as desired.

There's a reason why the size of the average kitchen has doubled since 1974. Yes, there are more appliances and they are generally much bigger. The refrigerator of today could eat the old one for a light snack. But appliances only tell half the story of why the kitchen has grown. We must also consider the influence of home cooking shows.

Before the 1970s, the average home cook could best be described as unadventurous. More often than not, the woman of the house would prepare the same meals her mother made. Meat loaf, casseroles, pot roast, and Rice Krispies Treats were all the rage. Then, along came Julia Child.

Meat Loaf

As the first real celebrity chef, Julia Child introduced Americans to French cooking. Her television program, The French Chef, first aired in 1972. It was a huge hit. Her collection of bestselling cookbooks also encouraged the amateur home cook to experiment with more complicated recipes. As you might imagine, more complicated recipes required more ingredients, more cookware and more kitchen appliances. It would not be an exaggeration to say that Julia Child was at least partially responsible for the growth of the American kitchen.
In spite of its expansion, the kitchen is often the hardest room in the home to keep in order. Most home improvement centers sell dozens of popular organizers for the kitchen. There are organizers for the refrigerator, the shelves, the herbs and spices and the wine. But the number one problem when it comes to kitchen organization is cabinet space.

Finding room for the food can be a chore. When families buy too much, they often have to store dry and canned foods in the laundry room. One reason why space is so limited is the cookware. Pots and pans and other kitchen utensils take up an incredible amount of room. Most amateur cooks have cabinets full of them.

Because space is hard to come by in the kitchen, many new products do more than one job. They are a lot like the Swiss Army Knife, in that they can be used for different tasks. Today we want to talk about the Chef Basket, which is one of the most popular new all-in-one kitchen utensils.

All-in-one is a funny phrase. It implies that something will solve all of your problems. Of course, that is never true. But what an all-in-one kitchen utensil will do is perform several different tasks and save you space. The Chef Basket can handle a dozen distinct duties.

It has been marketed mainly as a time-saving device. And while that is important, we were more impressed with how much space it can save the average homeowner. The Chef Basket is a flexible, reticular basket that folds down when not in use. Did we say folds down? We meant it folds flat! The home cook can then add water or oil to the pot or pan and wait for it to come to a boil before they drop in the Chef Basket. Best of all, the handles of the device are designed to stay cool to the touch. That means no more pot holders or oven mitts! It is even possible to go right from the pot to the plate if you so choose.

There is one food item in particular that the Chef Basket truly excels at cooking. Unless you are an experienced cook, hard-boiled eggs aren't easy to prepare. They must be moved from boiling water into ice water in short order to get them right. Most home chefs simply spoon them out one at a time, which obviously takes time. But with the help of the Chef Basket, you can simply lift them out of the boiling water and transfer the whole batch into a pot of ice water. It's safer, it's faster and the eggs won't crack.

The Chef Basket can also be used as a free-standing colander. Simply flip down the handles and place it in the sink. This feature makes the device an exceptional steamer. Add any vegetable you like to the Chef Basket, steam it in a pot of boiling water, and drain its contents in the sink. It honestly couldn't be any easier.

Creative Ideas For Leftovers

These are tough economic times but when times get tough, I say the tough get creative. Bill and Rosemary Haley writing in their book Haley's Hints have some great ideas about what to do with leftovers. With our grocery bills getting higher and higher, you'll find these tips very useful.

POULTRY, MEAT AND FISH

Meat Loaf

Ham - Use ham slices to decorate and liven up muffins. Split the centers and stuff with rolled ham. Dice cooked ham for use in salads and omelets.
Pork - Slice leftover pork and add to rice dishes or soups.
Meatloaf - Add leftover meatloaf to your spaghetti sauce. Make a meatloaf salad (like egg salad) for sandwiches by mixing with onions and mayonnaise. Here is my favorite use for leftover meatloaf or hamburgers - roll it up in tortillas with scrambled eggs for breakfast tacos.
Bacon - Fry up that last piece or two of bacon and crumble it for use in salads or as a topping. Again, you can use it will eggs in a breakfast taco or save it for a BLT sandwich especially good in the summer when home grown tomatoes are available.
Tuna Salad - Leftover tuna salad can be added to cooked macaroni. Sprinkle with cheese and bake for 1/2 hour. Instant casserole.

PASTA

Leftover noodles - Add leftover noodles to chicken or beef broth for a a delicious next day soup. Toss pasta with oil, vegetables and seasonings for a cold noodle salad. You can also make spaghetti pie by adding tomato sauce, cheese and a few veggies and then baking the mixture in the oven in a pie plate.

RICE

-Mix with kidney beans (rice and beans make a perfect protein), your favorite seasonings and toss. Makes an interesting side dish.
-Add olives and pimentos for a cold rice salad.
-Make rice pudding.
-Add vegetables, cut up chicken, leftover pork or beef or even leftover chicken nuggets and scrambled egg to make fried rice. My kids always loved that recipe. You can find recipes for fried rice online.

VEGETABLES

-Keep corn, peas, carrots, green beans for use in a rice salad.
-Add to your home-made or canned tomato soup.
-Reheat baked potatoes. Slice at 1/2 inch intervals and stuff with garlic butter or make twice baked potatoes or those great baked potato skins.
-Grated potatoes make great meatloaf extender.
-Pan-fry leftover boiled potatoes or boil some eggs and make a potato salad.
-Roll mashed potatoes into balls, dip them in egg, then bread crumbs and bake until golden brown.

A Healthy Diet While Traveling And Healthy Eating At A Restaurant

This is probably not the best time in which to start a healthy diet, but if you are currently making healthy choices in your foods already, modifying your diet slightly to accommodate travel is not as it first may seem.
If you are traveling by airplane, a healthy diet may have to include airplane food, which can often be poor for your healthy, depending on the selection. When you book your flight, ask about your food options, ask if a vegetarian dish is available. Vegetarian dishes are sometimes more nutritional in this case, but it really depends on what they will be serving. When driving or taking a bus, you may be tempted to stop at fast food restaurants and eat the foods found there. Avoid this whenever possible! If you’re on vacation, you may wish to splurge a tiny bit, but having fast food more than one during a week can really be bad for your health. If you must, choose the healthiest options available, like chicken breasts and diet soda.
Also, remember that you can take your own food when traveling. Carrying a loaf of whole-wheat bread or pita wraps, some lean lunch meat, and low-fat cheese in a cooler is a great way to avoid high-fat and high-cholesterol junk food meals. These are much better choices and you’ll save a lot of money as well. Call ahead to ask if there will be a refrigerator in your hotel room.
Lastly, make smart choices when you eat out. If you choose salads or pasta get the dressing on the side and ask about low-carb options. In fact, many places print these dieting options directly in the menu for the health-conscious people. Control your portions by ordering lunch menu sizes or splitting the meal in have and getting a doggie bag, and you’ll be well on your way to healthy eating, even away from home.
Yes, eating healthy foods when you travel can be a challenge. However, your health is worth it. When you eat good foods, you will also fight illnesses that you are likely to encounter when traveling and be more alert so that you can enjoy your trip.

Freezing Meat

Deep freezing meat, poultry and game is easy, economical and very convenient.

Attention farmers do not make the mistake of freezing meat too soon after butchering, a mistake which causes the toughening of meat. Always hang beef and large wild game carcasses in a chiller or refrigerator for approximately 6-10 days before cutting up, packaging and freezing. Hang pork and veal for approximately 24-36 hours. As for mutton always allow 2-4 days and lamb 1-2 days. Hanging meat before packaging to freeze always improves the texture and flavor.

Meat Loaf

Important Points:-

1. Always use good quality packaging materials to prevent meat from drying out.
2. If large quantities of meat are to be stored for long periods, I recommend the addition of mutton cloth covers tied firmly over the first wrapping, which will prevent damage to the airtight seal. Damage can be caused through the heavy solid blocks of meat banging together when a particular package is being located.
3. Labeling is a must, if chaos is to be avoided, for many items look alike when frozen. Always label clearly with the contents, date and quantity.

To prevent steaks and chops sticking together when freezing, place a double layer of plastic or waxed paper or a single layer of aluminum foil between each item. Place into a strong plastic or polythene bag and remove the air before sealing and freezing. An alternative method is simply to place chops and steaks onto a smooth flat tray, place tray into the freezer without a cover and freeze for approximately 2 hours. Once frozen, remove from tray and package into strong plastic or polythene bags. Remove the air and seal tightly then return to freezer. Items frozen by this method before packaging will not stick together. This is a great advantage to the busy housewife, as it is not necessary to thaw the food before cooking. Cooking meat from the frozen state seals in the juices.

I always coat lamb cutlets and veal steak for schnitzel with egg and breadcrumbs before freezing. Place a layer of plastic between each coated cutlet or veal steak then pack in a plastic bag, remove air, seal and freeze.

Poultry should always be plucked, cleaned and chilled in a refrigerator for at least 16-18 hours before packaging for freezing. Wash giblets separately. Insert inside the dressed bird. Wrap the entire bird in strong plastic or place in a polythene bag, remove the air and seal and freeze. To freeze pieces of poultry, bring the bird to the boil first to make it easier to cut neatly. Cut into pieces and packages as for steak and chops. Portions of poultry may also be dipped in egg and breadcrumbs before freeze and package in a plastic bag in the usual way. Thaw poultry portions for at least 2 hours at room temperature before cooking. Whole birds are best thawed completely before cooking.

Game should be bled, cleaned and chilled as soon as possible after the kill. Always hang large carcasses 8-10 days before cutting up like beef. Freeze smaller game whole or in portions like poultry (see above).

Paleolithic Diet Food List – Super Paleo Food List And Recipe Combo For Your Gastronomic Pleasure!

When it came to finding precise Paleolithic diet food list and recipes, part of me felt like giving up! This happened months ago when I was first introduced to the world of Paleolithic nutrition diet. See, there was so much contradicting information on what can or cannot be eaten by a Palo diet follower.

Basic Food List
Fruits and Vegetables – Asparagus, avocado, apricot, bananas, capsicum, cabbage, garlic, ginger, leek and lychee are all Paleo approved. Meanwhile, peas, green beans, sweet potato, and chestnuts are not Paleo friendly.
Meats and seafood – Bison, cow, buffalo, duck, poultry venison and veal are alright. Bacon and ham on the other hand, aren't 100% Paleo approved.

Other foods to be avoided by strict Paleo followers – Maple syrup, coffee beans arrowroot and gelatin.
Now, here's one of my favorite Paleo diet recipes!
Paleo Turkey Meatloaf

Ingredients:1 lbs ground turkey, 1 teaspoon kelp granules, 1 onion, 1 egg,  ½ cup ground nuts combo ( I combined crush walnuts and almonds), 5 cloves garlic, some black pepper.
Directions: Combine ingredients well. Next, grease a loaf pan with some olive oil and put the mixed ingredients on the pan. Bake for approximately 70 – 75 minutes.
Now, SATISFY your gastronomic urge with this yummy turkey meat loaf made with ingredients that are in accordance with the Paleolithic diet food list.

Homemade Tomato Ketchup: Fun, Fragrant, Flavorful

I read cookbooks like some people read novels. Historic cookbooks contain recipes for ketchup. These recipes sparked my curiosity because of their unusual ingredients. Early ketchup can be traced back to ancient Asia and it didn't contain tomatoes. Instead, it had a soy sauce base, mushrooms and pickled fish.

Denzil Green summarizes ketchup history in his article, "Daddies Tomato Ketchup," posted on the Practically Edible website. British and Dutch travelers tasted the condiment and tried to replicate it in the 1600s, according to Green, but it wasn't Asian ketchup.

Meat Loaf

The first recipe was printed in "The Compleat Housewife," written by Eliza Smith, published in England in 1727. Like the early recipes, hers didn't contain tomatoes. Anchovies, vinegar, spices and lemon peel gave the condiment its tangy flavor.

The condiment migrated to America and, in 1874, and "The Universal Recipe Book" contained recipes for it, Green notes. Making ketchup took hours and each family had its own version of it.

According to Lynn Kerrigan, autor of "Everything You Always Wanted to Know About Ketchup," posted on the Global Gourmet website, the word ketchup comes from the Chinese word ke-tsiap. As the recipe migrated the names changed: catsup, kotchup, kitsip, catsoup, and others. The Heinz company started making ketchup in 1872 and the recipe has never changed.

Ketchup has become a household staple. Americans slather it on hamburgers, French fries, hot dogs, and meat loaf. It is an essential ingredient in barbecue sauce and a hidden ingredient in Chinese stir-fry. Some salad dressings also contain ketchup.

Does the homemade product taste like commercial? The only way to find out was to make ketchup. I found several recipes on the Internet and all contained tomatoes, onions, mustard, cinnamon, cloves, and sugar. David d'Anjou submitted a recipe to the CD Kitchen website. Though it takes several hours to make his recipe, he says "you can do other things at the same time and the result is great tasting ketchup for the year!"

I started with an Epicurious website recipe, which uses canned tomatoes, a step that saves you all the muss and fuss of peeling. Since I didn't have any fresh onions I substituted dehydrated. Instead of whole spices I used ground ones. My ketchup had more depth of flavor than commercial brands. Homemade ketchup -- the kind that hasn't been canned -- will keep in the refrigerator for 10-14 days.

Ingredients

4 28-ounce cans of stewed tomatoes, drained
4 tablespoons dehydrated chopped onions
1/2 cup granulated sugar
1 cup apple cider vinegar
4 garlic cloves, minced
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1 cinnamon stick
1 teaspoon celery seed
2 teaspoons dry mustard
1 teaspoon paprika
1/4 teaspoon ground red pepper

Method

Open the canned tomatoes and drain juice into a bowl. Save this juice for soups, stews, and sauces. Put the tomatoes into a stainless steel kettle and crush with a potato masher. (Be careful, because juice will squirt out.) Add all remaining ingredients. Cover and simmer for two hours, or until most of the liquid is gone. Remove cinnamon stick. Puree mixture with an immersion blender or food processor. Return to kettle and simmer over low heat until thick, about two hours. Cool (the ketchup with thicken as it cools) and ladle into jars. Makes about 7 cups. For less ketchup, make half the recipe.

1/4 Tsp. Oregano, dried
3 Cups Water, hot
1/4 Tsp. Black Pepper
1 Cup Carrots, Sliced
8 oz. of Tomato Sauce
1/4 Tsp. Seasoned Salt
1 Cup Celery, Sliced
1 Tbsp. Soy sauce, Low-sodium
1 Envelope Dry Onion Soup Mix
1 Cup cooked Macaroni
1/4 Cup Parmesan Cheese, grated

Here's how to do it:

a. Mix all ingredients together, but not the Parmesan cheese and macaroni yet,

in your slow cooker.

b. Cook them low for some six to eight hours.

c. Then have the macaroni cooked (as per instructions) and turn your slow cooker to high level. Then you can put the cooked Parmesan cheese and the macaroni.

d. Have it cooked for some fifteen-twenty minutes more.

e. Then you can serve it up and let the family enjoy!

(Note: The actual ideal size of the slow cooker to be used for a recipe like this is a four quart one. And this recipe can make up to six servings. Then, if you like to use an extra lean hamburger, you have to cook that first and then drain it off of all the grease then put it in your slow cooker.)

The next one is a healthy recipe for kids that is rich in Vitamin C. Take note that this vitamin is really essential for the kids; and the great thing about this is that this vitamin is present in a wide variety of vegetables and fruits. One good benefit of Vitamin C is that it is a powerful agent acting out as anti-oxidant and also as anti-inflammatory one that will definitely prevent damages to the cells that are oxygen-based.

And an easy source of Vitamin C is found by taking different fruits and veggies which can also be delicious especially when added with attractive colors and healthy textures that are still appealing to children. 16 oz. of fresh or frozen strawberries
1 large Cool Whip tub
1/4 cup of sugar
1 pkg. marshmallows, colored

1. First, cut up all the strawberries
2. Then mix it with the Cool Whip
3. Add the sugar
4. Mix them well
5. Make sure you stir in the package marshmallows, 1/2 to 3/4
6. Finally, refrigerate first before serving.

Meatloaf isn't always made with the traditional ground beef, it can also be made with low fat ground turkey meat, which cuts down on the calories and the fat. Ground turkey is very versatile and blends well with a variety of spices and vegetables.

This particular turkey meatloaf is packed with onions, mushrooms, broccoli, carrots and green peppers. It's held together with quick cooking oats and includes seasonings like garlic, poultry seasoning and soy sauce. This loaf can be the centerpiece of any hearty meal.

Meat Loaf

Here's how to make this meatloaf:

1 cup of diced yellow onion, 4 ounces of mushrooms that have been chopped, 1 cup of diced broccoli florets, 1/2 cup of diced green bell pepper, 1 cup of grated carrots, 1/4 cup of chopped fresh parsley, 1 garlic clove that's been minced, 1-1/4 pounds of ground turkey, 3/4 cup of quick cooking oats, 1/4 cup of ketchup, 2 tablespoons of soy sauce, 1 large egg, lightly beaten, 1 teaspoon of poultry seasoning, 3/4 teaspoon of salt, 1/4 teaspoon of black pepper and 1 cup of canned cranberry sauce, drained and sitting at room temperature.

Preheat oven to 350 degrees. Prepare a 9x5-inch loaf pan with cooking spray.

In a medium saucepan, cook, over medium heat, the onions, mushrooms, broccoli, bell pepper and the carrots in salted water. Bring to a boil and cook for an additional 2 minutes. Drain the water from the pan. Transfer the vegetables to a large bowl.

In a large bowl, combine the cooked vegetables, parsley, garlic, ground turkey, quick cooking oats, ketchup, soy sauce, egg, poultry seasoning, salt and pepper.

Place the meatloaf mixture into the prepared pan and press down gently. Bake for 1 hour or until the loaf is nice and firm, and a light brown color. Remove from oven and let it sit for up to 10 minutes.

Transfer the meatloaf to a serving platter and serve with the cranberry sauce.

When it comes to making a tasty meatloaf, it all comes down to the kinds of spices and other things that are added to give it some great flavor. This is a standard meatloaf recipe that includes common food items like: ketchup, tomato juice, onion and mustard. Many meatloaf recipes have a glaze topping. This one includes a simple brown sugar glaze.

Here's the meatloaf recipe:

Meat Loaf

1 1/2 pounds lean ground beef, 1/2 cup ketchup, 1/3 cup tomato juice, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/8 teaspoon crushed red pepper, 2 eggs, beaten, 3/4 cup fresh bread crumbs, 1/4 cup diced onion and 2 teaspoons of prepared mustard.

Brown Sugar Glaze

1/2 cup ketchup, 1 teaspoon prepared mustard and 4 teaspoons of brown sugar.

Preheat the oven to 400 degrees. Line a 9x5-inch loaf pan with aluminum foil and cooking spray.

In a large bowl, combine the ground beef, 1/2 cup of ketchup, the tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion and 2 teaspoons of mustard. Mix all of this together with a large spoon or your hands. Place the meatloaf mixture into the pan and press down until set.

In a small bowl, combine 1/2 cup of the ketchup, 1 teaspoon of mustard and the brown sugar. Mix together until nice and smooth. Spread this glaze mixture on the top of the meatloaf.

Bake loaf for 1 hour, or until it is firm and lightly brown in color. Drain the fat off and let it stand for about 5 to 10 minutes before serving.
